The Stem Trick
One of the most impactful yet simple strategies to combat chilli spoilage involves a quick action right after you bring them home: remove the stems. Chillies are particularly prone to developing rot that often begins at the point where the stem attaches to the fruit. By proactively snipping off the stems, you effectively remove a common entry point for decay. Smart Fridge Storage
Once prepared, the best place for your chillies is typically the refrigerator, but how you store them there makes all the difference. For optimal freshness, place your chillies inside an airtight container or a sealed plastic bag. This creates a barrier against external moisture and ethylene gas, which can hasten ripening and decay. An alternative, equally effective method is to wrap each chilli, or small batches, in tissue paper before placing them in your chosen container. The tissue paper acts as a natural desiccant, diligently absorbing any excess moisture and helping to maintain a dry environment around the chillies.
Science-Backed Preservation
Scientific research offers compelling insights into the ideal conditions for keeping chillies fresh. Studies indicate that maintaining a cool temperature, specifically between 4–7°C, significantly extends their shelf life, allowing them to stay fresh up to three times longer than if left at room temperature. Crucially, this cool environment works best when combined with airtight containers, which minimize exposure to air and moisture. Furthermore, it's beneficial to regularly inspect your stored chillies and promptly remove any that have begun to spoil, as this can prevent the spread of decay.
