Authentic Kola Chole Base
Actress Ashwini Kalsekar, known for her roles in 'Golmaal,' recently offered her followers a delightful peek into her culinary world by sharing an accessible
recipe for Kola Chole. In a captivating Instagram video, she meticulously detailed each step, making it easy for anyone to recreate this comforting dish. The process begins with heating a blend of standard cooking oil and cold-pressed coconut oil in a sturdy, heavy-bottomed pan. Once the oil reaches the perfect temperature, a teaspoon of mustard seeds is added and allowed to splutter, signaling the start of the flavour infusion. Following this, a small pinch of asafoetida (hing) is introduced, alongside a generous scattering of fresh curry leaves and a combination of dried red chillies and slit green chillies, which lend a gentle heat to the preparation.
Flavorful Pumpkin & Chole
The next crucial step involves incorporating approximately two cups of cubed pumpkin into the aromatic tempering. This is seasoned with salt and a small amount of water to aid in the cooking process. The pan is then covered, allowing the pumpkin to simmer gently over medium heat. The goal is to achieve a tender texture for the pumpkin while ensuring it retains its form. Once the pumpkin is perfectly softened, one cup of pre-boiled chickpeas (chole) is stirred in, along with three to four tablespoons of freshly ground coconut paste, which adds a lovely richness and texture. For a vibrant hue, half a teaspoon of turmeric powder is then added, imparting a beautiful golden color to the dish.
Balancing & Finishing Touches
To harmonize the flavors, a teaspoon of sugar is introduced, effectively balancing the savory notes of the other ingredients. Ashwini Kalsekar also demonstrates how to adjust the consistency of the Kola Chole by adding a little more water if needed, ensuring a pleasant, saucy texture. After allowing the entire mixture to simmer for a couple of minutes, allowing the flavors to meld beautifully, the dish is finished with a generous sprinkle of freshly chopped coriander. This fresh herb adds a burst of fragrance and a touch of visual appeal. Kalsekar suggests serving this comforting Kola Chole piping hot alongside steamed rice, with a final, decadent drizzle of ghee on top to enhance its homestyle charm and deeply satisfying character.
