Its high fibre content and essential electrolytes, further enhanced by sabja seeds, contribute to its efficacy in combating the heat and replenishing lost energy, making it a perfect post-workout drink or a midday thirst quencher.
Crafting the Paste
To begin crafting this cooling elixir, you'll first prepare a vibrant green paste. Start with half a cucumber; you can choose to peel it or leave the skin on for an extra fiber infusion. Accompanying the cucumber are fresh coriander leaves, providing a burst of herbaceous flavour, and a small piece of peeled ginger for a hint of warmth. A single green chilli can be added for a touch of spice, though you can adjust its quantity or remove the seeds for a milder taste. The key thickening and protein elements in this paste are two teaspoons of sattu powder and three to four teaspoons of plain curd, acting as a binder. Rounding out the flavour profile are salt to taste and a quarter teaspoon of roasted cumin powder, all blended together in a mixer jar until a smooth, bright green consistency is achieved. Finally, add one to two teaspoons of soaked sabja seeds, which have been soaking in water for about 10-15 minutes. For an extra chilled beverage, you can either add ice cubes directly to the chaas or refrigerate it for 10-15 minutes before serving.
