Paneer Preparation
Begin by preparing your paneer, the star ingredient of this delightful snack. You'll need approximately 200 grams of paneer. The first crucial step involves
cutting the paneer into long, finger-like strips. This shape not only makes them easy to handle and dip but also ensures even cooking and a pleasing presentation. Once cut, the paneer strips are ready for their initial flavor infusion. This initial seasoning is key to developing a delicious base for the final crispy coating. Ensure the cuts are uniform for consistent results throughout the cooking process.
Marination Magic
After slicing the paneer, it's time to impart a burst of flavor through marination. Lightly coat the paneer fingers with a fragrant blend of ingredients. This includes 1 tablespoon of ginger-garlic paste, which provides an aromatic foundation. Next, incorporate 1 teaspoon of red chilli powder for a touch of heat, 1 teaspoon of coriander powder for earthy notes, and 1/2 teaspoon of chaat masala for a tangy zest. Finally, season with salt to taste and 1 teaspoon of black pepper for a subtle spice. Gently mix these spices onto the paneer strips, ensuring each piece is lightly coated. Allow this mixture to marinate for a minimum of 15 minutes, giving the flavors time to penetrate the paneer and prepare it for the next stage.
Batter & Breading Station
While your paneer is marinating, assemble your dredging components to ensure a smooth and efficient coating process. Prepare a thin batter by combining 1/2 cup of refined flour (maida) with 2 tablespoons of cornflour. This mixture provides a light, adherent base for the breadcrumbs. Season this batter with 1 teaspoon of black pepper, along with 1 teaspoon of oregano and 1 teaspoon of chilli flakes for added aromatic complexity and a hint of spiciness. Mix in a pinch of salt to balance the flavors. In a separate shallow dish, have about 1/2 cup of breadcrumbs ready. This two-step coating system—batter followed by breadcrumbs—is essential for achieving that desirable golden-brown, crispy exterior.
Coating & Frying
Now, it's time to bring it all together and fry those paneer fingers to perfection. Take each marinated paneer strip and carefully coat it thoroughly with the prepared flour and cornflour batter. Ensure every surface is covered. Immediately after dipping in the batter, roll the coated paneer in the breadcrumbs, pressing gently to ensure a good adhesion. This layering of batter and breadcrumbs will create the characteristic crispy texture. Once all the paneer fingers are coated, they are ready for frying. Heat oil in a pan over a medium flame. Fry the paneer fingers in batches until they turn golden brown and are crispy on all sides. This cooking process typically takes about 20 minutes. Serve these delicious paneer fingers hot, accompanied by your favorite mint chutney or ketchup for a complete snacking experience.
