Fresh coriander is a non-negotiable addition, infusing the dish with a burst of freshness that cuts through the richness. This fragrant oil infusion is prepared swiftly and poured directly over the batter just before the lid is placed on during cooking. It typically begins with heating oil, followed by spluttering mustard seeds, then adding cumin seeds, fragrant curry leaves, and nutty sesame seeds. A pinch of asafoetida is often included here as well. The sesame seeds are toasted until golden, about thirty seconds, before the entire aromatic mixture is poured over the raw batter. This tempering creates a wonderfully crisp exterior layer upon cooking. For the cooking process itself, a moderate heat is best. The key leavening agent in Handvo, as in many other Gujarati snacks, is Eno fruit salt. It's added to the portion of batter intended for immediate cooking, along with a tiny splash of water, and stirred quickly. The batter will foam up, indicating it's ready. This foamy batter is then immediately poured into the heated, oiled pan and spread evenly to about an inch thick. The pan is covered, and the Handvo is cooked on low heat for eight to ten minutes until the edges are visibly browned and crisp, and the surface appears set. The crucial step of flipping the Handvo requires confidence; a hesitant flip can lead to breakage. If you're apprehensive, cooking smaller portions makes the flip easier. Once flipped, it's covered and cooked for another five to six minutes until the second side is equally golden and cooked through. The result is a delicious, savory cake that can be cut into wedges or squares.
Serving & Reimagining Handvo
Handvo is best savored immediately after cooking, served piping hot. The perfect accompaniment is a fresh green coriander chutney, its cool, sharp flavor providing a delightful contrast to the warm, spiced cake. Alternatively, a side of plain yogurt or a simple raita, made by blending yogurt with coriander and a pinch of chaat masala, offers a refreshing complement. Handvo serves admirably as a complete breakfast, a substantial evening snack, or even a light dinner, offering a satisfying and wholesome meal. Leftovers can be masterfully revived by reheating them in a pan with a small amount of oil; this technique expertly restores the crispness of the crust, making them almost as good as freshly made. It is strongly advised to avoid microwaving leftovers, as this method tends to make the edges soft and unappealing. For those who prefer baking, Handvo can also be prepared in an oven. Preheat your oven to 180°C (350°F), pour the prepared batter into a greased baking tin, add the tempering on top, and bake for approximately thirty to thirty-five minutes, or until golden and cooked through. While the oven-baked version tends to be slightly fluffier, the stovetop method is renowned for its superior crust, making both variations worthy of trying.
