The primary ingredients required for Mango Rice include 1½ cups of white, brown rice, or quinoa; ¾th cup of grated green mango; 3 tbsp of healthy oil (such as coconut oil); ¼th tsp of black Andhra mustard seeds; ¼th tsp of cumin; 5-8 small green Thai chilies or red chilies; 1 tbsp of channa dal; 1 tbsp of unsalted peanuts; ¼th tsp of turmeric powder; 2-3 sprigs of curry leaves; and cilantro. The preparation involves grating the mango without peeling the skin, washing the rice, cooking it with the appropriate amount of water, oil, and salt, and letting it cool after cooking. Tempering and Mixing
The next step is to prepare the tempering. This involves heating 2 tbsp of oil in a small pot. Then, add red chilies and cook until they turn light brown.
