The Lauki Brownie Creation
Former actress Sameera Reddy, now a prominent content creator, has shared her journey towards a healthier lifestyle, documenting her fitness regimen and
dietary changes. A recent highlight is her innovative lauki (bottle gourd) brownie recipe. Reddy presented this "guilt-free" dessert on Instagram, describing it as "rich, chocolatey, and surprisingly nourishing," emphasizing that it's a treat that leaves you feeling good afterward. The recipe involves preparing the lauki by grating and lightly squeezing out excess moisture, ensuring it remains soft. This prepared lauki is then combined with ingredients such as powdered jaggery, peanut butter, milk, oil, and vanilla extract to create a smooth, wet mixture. Separately, dry components including flour (Maida or oat flour), cocoa powder, baking soda, baking powder, and a pinch of salt are blended. The wet and dry mixtures are then thoroughly combined, and chocolate chips are folded in. The batter is poured into a prepared baking tray and baked at 180 degrees Celsius for approximately 25 to 30 minutes, or until a skewer inserted comes out clean. Reddy advises letting the brownies cool slightly before cutting them into desired portions, making them an accessible and delightful treat for anyone looking to enjoy a sweet without the usual guilt.

Aditi Prasad Apte, a Senior Clinical Nutritionist, explains that lauki, a staple in traditional diets, is naturally low in calories and comprises about 90% water. This high water content makes it ideal for adding a moist texture to baked items. However, Apte cautions that lauki cannot entirely replace fats like butter or oil, which contribute essential richness, mouthfeel, and structural integrity. Instead, it functions best as a partial substitute, effectively reducing the overall fat content while still helping to maintain a soft and fudgy consistency. This makes the lauki brownie a more balanced dessert option compared to traditional recipes, offering a softer texture with less added fat.
