A Gastronomic Test
For five exclusive nights this May, Mumbai's food enthusiasts will have the unparalleled opportunity to witness the brilliance of one of modern gastronomy's
most dynamic culinary figures. Chef Gaggan Anand is set to grace the Masque Lab with his presence, not for a fleeting pop-up, but for a more profound and structured culinary residency. Anand himself views this as a significant undertaking, likening it to a 'test match' in cricket, emphasizing its capacity to rigorously challenge and showcase endurance and technical mastery in a way that shorter, more spontaneous events cannot. This format allows for a deeper exploration of culinary ideas and execution, moving beyond the usual high-energy bursts into a more sustained demonstration of skill and creativity.
An Evolving Collaboration
The partnership between Gaggan Anand and Masque founder Aditi Dugar signifies a natural progression of their shared passion and previous collaborations. Dugar expresses that the energy and mutual learning experienced during joint ventures in both Bangkok and Mumbai have paved the way for this homecoming. For Anand, who is currently in a phase of significant culinary reinvention, this residency at Masque Lab is more than just a return; it's a rare chance for diners to witness an artist in the process of transformation. This type of culinary takeover provides guests with a truly transient, deeply personal, and exceptionally rare gastronomic encounter that cannot be replicated.
Masque Lab's Experimental Stage
Masque Lab, with its distinctive intimate setting and focus on experimental dining, has consistently served as a vital platform for testing novel culinary concepts and hosting visiting chefs. This makes it the ideal venue for a chef like Anand, whose culinary philosophy is rooted in embracing risk, fostering guest interaction, and thriving in the intense, close-quarters environment that such a space facilitates. This collaboration also builds upon Chef Varun Totlani's recent experience at Anand's compact 14-seater establishment in Bangkok, where he worked alongside Anand's team on an Indo-Thai inspired menu. This exchange of culinary ideas now returns to Mumbai in a more comprehensive and evolved iteration.
