Crafting Mango Curd Magic
The journey to creating these cookies begins with the vibrant mango curd. Start by combining 150g of mango puree with 25g of caster sugar and 50g of condensed milk in a heavy-bottomed saucepan. Whisk or stir until the sugar is fully dissolved. Gently heat this mixture over medium heat, stirring constantly to prevent any sticking or burning, until it thickens slightly. Crucially, do not let it reach a rapid boil. Once smooth and warm, remove from heat and incorporate 30g of unsalted butter piece by piece, stirring vigorously until it emulsifies, lending a glossy, rich texture. Pour this into a clean container to cool; it will continue to thicken as it sets, achieving a spreadable, custard-like consistency perfect for filling.
Assembling The Cookies
With the luscious mango curd ready, attention turns to the cookie dough. Cream together 75g of butter with 40g of icing sugar until light and fluffy. Gradually incorporate 100g of flour, mixing until a cohesive dough forms. This dough provides the perfect buttery backdrop for the tangy mango filling. Once the dough is prepared, roll small portions into balls and flatten them slightly. Use your thumb or a small spoon to create an indentation in the center of each cookie. Generously fill these hollows with the cooled mango curd.
