Cabbage Preparation
The initial step involves preparing the vibrant red cabbage. Begin by slicing the cabbage into four wedges. These wedges are then arranged on a large roasting
tray lined with baking parchment. A drizzle of olive oil and a generous coating of rose harissa follows, ensuring each wedge is well-covered. The harissa and oil are massaged into the cabbage to fully incorporate the flavors. The tray is then covered with foil and placed in a preheated oven at 200C/180C fan/gas 6. The cabbage roasts for 50 minutes to an hour, with the foil removed halfway through the cooking time to allow for caramelization.
Bulgur Wheat Prep
While the cabbage roasts, prepare the bulgur wheat. Cook the bulgur according to the package instructions. Once cooked, the bulgur is seasoned with the remaining olive oil, most of the chopped coriander, toasted flaked almonds, and optional golden raisins. This mixture is seasoned with salt and pepper. The combination of bulgur, almonds, and raisins provides a delightful textural contrast to the roasted cabbage. The bulgur is then set aside, ready to be paired with the roasted cabbage and yogurt dressing.
Yogurt Dressing
A simple yet flavorful yogurt dressing complements the dish. The dressing is created by mixing low-fat natural yogurt with lime zest and juice. The remaining coriander and a pinch of salt and pepper are then stirred into the yogurt mixture. This dressing adds a refreshing, tangy element to the roasted cabbage and bulgur, balancing the richness of the harissa and the earthy flavors of the bulgur wheat. It is the final component that ties everything together, enhancing the overall taste experience.
Assembly and Serve
Once all the components are prepared, it's time to assemble the dish. The seasoned bulgur wheat is divided between two bowls. The roasted red cabbage is then placed on top of the bulgur in each bowl. Finally, a drizzle of the lime-infused yogurt dressing adds the finishing touch. This combination of textures and flavors creates a satisfying and visually appealing meal.
