Grill Your Veggies
Begin by preparing your fresh vegetables for grilling. You'll need one large ear of corn, shucked, and one medium zucchini, which should be halved lengthwise.
Lightly coat both the corn and the cut sides of the zucchini with approximately one tablespoon of olive oil. Place them on a preheated grill set to medium-high heat, between 350°–450°F (177°–232°C). Grill for about 5 to 7 minutes, turning them occasionally until they reach a tender consistency. Once grilled, set them aside to cool slightly. After cooling, carefully cut the corn kernels off the cob and then slice or chop the grilled zucchini into manageable pieces, ready for assembly on your flatbreads.
Assemble & Grill Flatbreads
With your grilled vegetables ready, it's time to assemble the flatbreads. Take four whole-wheat flatbreads and spread about one tablespoon of pizza sauce evenly over each one. Next, arrange the prepared grilled zucchini and corn kernels over the pizza sauce, ensuring an even distribution across all four flatbreads. Generously top each flatbread with approximately half a cup of crumbled, reduced-fat feta cheese. Carefully transfer the assembled flatbreads onto the grill using a large spatula. Grill them, covered, for approximately 3 minutes, or until the flatbreads are nicely heated through and the feta cheese has softened and become slightly melty. This quick grilling process ensures a warm, cohesive dish.
Finishing Touches
Once the flatbreads are perfectly grilled and the cheese is melted, it's time for the final enhancements. Carefully remove the flatbreads from the grill and place them onto individual serving plates. To complete the dish, sprinkle thinly sliced red onion and fresh thyme leaves over the warm flatbreads. The combination of the sweet vegetables, savory cheese, and the subtle bite of red onion, complemented by the aromatic thyme, creates a wonderful flavor profile. Serve these delectable grilled corn and zucchini flatbreads immediately to enjoy them at their best, either as a satisfying main course paired with a fresh salad or as a hearty appetizer for guests.
