Paneer's Preparation
The journey to a perfect Chilli Paneer begins with the paneer. Start by cubing the paneer into uniform sizes. For a crispy texture, lightly shallow fry
or air fry the paneer cubes until golden brown. This step is essential because it prevents the paneer from becoming soggy when added to the sauce. Alternatively, you can use store-bought paneer, but make sure to cut it into the desired shape and size. Ensure you don't overcook the paneer during this stage, or it will become rubbery. Drain the excess oil to prevent the dish from becoming overly greasy. Remember, the quality of your paneer greatly impacts the dish's final taste and texture, so it is worthwhile to select the best.
Sautéing Aromatics
Next comes the aromatics, which form the base of the flavour. Heat oil in a pan over medium-high heat. Add finely chopped garlic and ginger; sauté until fragrant. Then, introduce the diced onions and capsicum (bell peppers). Stir-fry these vegetables until they soften slightly but still retain some crunch. This balance of softness and crunch is crucial. For an added layer of flavor, consider adding finely chopped green chilies, based on your spice preference. Be careful not to burn the garlic and ginger, as this can affect the overall taste of your dish. Stir-fry constantly to ensure even cooking and prevent sticking.
Sauce Creation
Now, it's time to create the sauce that will bind everything together. In the same pan, add soy sauce, chili sauce, tomato sauce, and a touch of vinegar. These ingredients contribute the perfect balance of savory, sweet, and tangy flavours. Stir the mixture well to combine. You might want to consider adding a pinch of sugar to balance the acidity. If you prefer a thicker sauce, prepare a cornstarch slurry by mixing cornstarch with a small amount of water, and add it to the sauce while stirring continuously until it thickens. Be cautious about the amount of chili sauce used, as its spiciness varies depending on the brand. Always taste and adjust seasonings to your personal preference.
Bringing it Together
Once the sauce is ready, it's time to bring all the elements together. Add the fried paneer cubes to the prepared sauce and gently toss them to ensure they're coated evenly. Cook for a few minutes, allowing the paneer to absorb the flavors. If you like, include some of the sautéed vegetables. For added texture and flavour, add a sprinkle of finely chopped spring onions and fresh coriander leaves before serving. Serve the Chilli Paneer immediately, as this ensures the paneer maintains its best texture and the flavors are at their peak. You can serve it as a starter or a side dish along with fried rice or noodles for a complete meal.
