Creamy Kesar Pista Kulfi
Indulge in a rich and creamy Kesar Pista Kulfi, crafted without any added sugar, cream, or milk powder. This delightful frozen treat uses wholesome ingredients
to achieve its signature flavour and texture. The base begins with 1.5 litres of full-fat milk, which is then simmered and reduced by half to create a thicker consistency. To this, we add a nutritious blend of 1 cup of makhana (fox nuts), 1/4 cup of blanched California pistachios, and 8–10 de-seeded dates, which naturally sweeten the kulfi. Aromatic cardamom powder (about 1–2 teaspoons) and a pinch of saffron, pre-soaked in a little milk for vibrant colour and aroma, are also incorporated. The cooked makhana, pistachio, and date mixture is then blended with the thickened milk until perfectly smooth. For an optional extra crunch, chopped pistachios can be stirred in. This luscious mixture is then poured into kulfi moulds and frozen until firm. To serve, briefly dip the moulds in warm water before gently twisting to release the kulfi. Garnish with extra chopped pistachios and dried rose petals for a beautiful presentation.

Quench your thirst with this invigorating Jamun Chia Cooler, a sugar-free and revitalizing beverage perfect for hot days. This recipe features the unique flavour of jamun berries, combined with the healthful properties of chia seeds. You'll need approximately 5 jamun fruits, deseeded and lightly mashed after a brief soak in warm water, along with 15 grams of chia seeds that have been pre-soaked in warm water until gelatinous. To enhance the taste, a blend of 1/2 teaspoon of black salt, 1/4 teaspoon of regular salt, and 1/2 teaspoon of chaat masala is added, providing a delightful tangy and savoury profile. For sweetness without sugar, two sachets of stevia are incorporated. The mixture is then combined with chilled water or soda, depending on your preference, and plenty of ice cubes. A final flourish of a pinch of chilli powder adds a subtle kick, making this cooler a truly unique and healthy way to stay hydrated.
