Crafting Your Jowar Dosa Batter
To begin creating your delightful Jowar Dosas, gather your ingredients: one cup of jowar flour, a half cup of rice flour for added crispiness (this is optional), and a quarter cup of urad dal (split black lentils) that needs to be soaked for approximately four to six hours. Alongside the urad dal, soak one teaspoon of fenugreek seeds. Once soaked, drain the urad dal and fenugreek seeds and grind them into a smooth paste, adding a little water as necessary to achieve the right consistency. In a spacious bowl, combine the jowar flour, rice flour if you're using it, and the urad dal paste. Season with salt to your preference. Gradually incorporate water while mixing to form a smooth, thin batter, mirroring the consistency of traditional dosa batter. Ensure there are absolutely no lumps. Drizzle a small amount of oil around the edges and lightly over the top of the dosa. Allow it to cook until the underside achieves a beautiful golden-brown hue and develops a satisfying crispness. Carefully flip the dosa and cook the other side for about a minute. Your delicious, crispy, and light Jowar Dosas are now ready to be served.
