Marinating the Steak

steaks, combine 2 tablespoons of olive oil with 2 finely grated medium garlic cloves, 2 teaspoons of fresh rosemary, 1 teaspoon of coarsely ground black pepper, and ½ teaspoon of salt. Thoroughly rub this aromatic mixture all over the steaks. Allow them to marinate at room temperature for 30 minutes. Pan-Searing Perfection
To achieve a beautiful crust, preheat your cooking surface. Place a cast-iron or ovenproof skillet into the oven and set the oven temperature to 425°F (218°C). Once the oven reaches the desired temperature, carefully remove the hot skillet from the oven and place it directly onto the stovetop over medium-high heat. Sear the marinated steaks for 2 to 3 minutes per side, until a rich brown crust forms. This initial high-heat searing is crucial for locking in juices and developing a desirable texture.
Oven Roasting
After the initial sear, the steaks transition to the oven to reach their perfect internal temperature. Transfer the skillet containing the seared steaks directly into the preheated 425°F (218°C) oven. Roast for approximately 5 minutes, or until an instant-read thermometer inserted into the thickest part of the steak registers 145°F (63°C), indicating your desired level of doneness. Once cooked, remove the steaks from the oven and place them on a cutting board to rest for 5 to 10 minutes. This resting period allows the juices to redistribute, ensuring a tender and moist steak.
Assembling the Dish
The final presentation brings together the succulent steak and a refreshing salad. Thinly slice the rested steaks against the grain to maximize tenderness. Divide the sliced steak among four plates. Generously top each portion with a tangle of fresh arugula. Squeeze fresh lemon wedges over the arugula and steak. To finish, sprinkle with shaved Parmigiano-Reggiano cheese and add a delicate drizzle of 1 tablespoon of balsamic vinegar.
