The Perfect Summer Quencher
As temperatures soar, the need for a refreshing and healthy drink becomes paramount. Aam Panna, a beloved Indian concoction made from unripe mangoes, emerges
as a star performer in combating summer's harsh effects. Chef Kunal Kapur generously shares his signature method for preparing this invigorating beverage, ensuring you can easily create a cooling elixir at home. This drink is more than just a thirst quencher; it’s a vital tool for maintaining fluid balance and sustaining energy levels when the sun is at its strongest, making it an indispensable part of your summer wellness routine.
Crafting the Concentrate
The journey to a perfect glass of Aam Panna begins with preparing a flavourful mango concentrate. Start by carefully peeling approximately 500 grams of raw mangoes and cutting them into substantial pieces, setting the seeds aside. These mango chunks, along with their seeds, are then placed in a deep cooking vessel. To this, add about 1 cup of jaggery or sugar for sweetness, a teaspoon of roasted cumin powder for earthy depth, half a teaspoon of black salt for a distinctive tang, a pinch of black pepper powder for a subtle kick, and three-quarters of a teaspoon of chilli powder for a hint of warmth. Cover these ingredients with water and bring the mixture to a vigorous boil. Once boiling, reduce the heat to a gentle simmer and allow it to cook, covered, for approximately 25 to 30 minutes. The mangoes should become completely soft and easily mashable. After this cooking period, let the mixture cool down entirely. Once cooled, carefully scrape the soft pulp from the mango seeds and return it to the pan with the cooking liquid. For a smooth consistency, transfer this thick mango mixture into a blender, adding a handful of fresh mint leaves for a burst of freshness. Blend until you achieve a smooth, homogenous pulp. This concentrated syrup can be stored chilled in an airtight container for up to two weeks, ready to be transformed into refreshing drinks.
Serving Your Aam Panna
Once your concentrated Aam Panna base is ready and chilled, the final step is to assemble the perfect serving. To prepare a single glass, take a generous amount of the thick mango syrup – the exact quantity can be adjusted based on your preference for sweetness and tang. Pour this concentrate into a serving glass. Add a few ice cubes to ensure maximum chill. Then, top up the glass with chilled water, stirring well to combine the syrup with the water. The recipe suggests using about 2 litres of water for the entire batch of concentrate, but you can dilute it further or less to achieve your desired flavour strength. For an extra touch of freshness and visual appeal, garnish the drink with a few fresh mint leaves just before serving. This simple yet delightful beverage is now ready to be enjoyed, offering immediate relief from the summer heat.
