to pineapple as the star. The fruit is transformed through a 'tandoori' cooking method, achieving a smoky char and caramelization that intensifies its natural sweetness while adding a delightful chewiness. Fresh pineapple chunks are meticulously coated with a blend of aromatic Indian spices, including red chilli powder, chaat masala, and black salt, along with a touch of castor sugar to enhance caramelization. A drizzle of oil ensures the spices adhere beautifully. These seasoned pineapple pieces are then subjected to an air-frying process at 200°C for approximately 15 minutes. This high-heat cooking results in a beautifully charred exterior and a tender, juicy interior, mimicking the smoky essence of tandoor-cooked ingredients without requiring an actual tandoor. This step is crucial for developing the signature smoky and slightly caramelized flavour profile that defines the dish.
Assembling The Flavors
