dried porcini mushrooms in boiling water, which takes about 20 minutes, then crumbling a vegetable stock cube into the mushroom liquid. Other ingredients include olive oil, onion, garlic, chestnut mushrooms, risotto rice, white wine, butter, parsley, and parmesan cheese. This initial stage sets the foundation for the flavours.
Sauté Aromatics & Mushrooms
The next step focuses on building the flavour base. Heat some olive oil in a pan, and gently sauté the finely chopped onion and garlic until they soften, about 5 minutes. Incorporate the chopped chestnut mushrooms and the rehydrated dried mushrooms, and cook for around 8 minutes until the fresh mushrooms begin to soften. Toast the Rice

The brief toasting of the rice before adding liquid gives it a slightly nutty flavour. The alcohol from the wine evaporates, leaving behind its subtle flavour, which adds another dimension to the dish.
Add Stock Gradually
The core of risotto-making is the gradual addition of warm stock. Pour in about a quarter of the mushroom stock, letting the rice simmer while stirring continuously until the liquid is absorbed. Repeat this process, adding stock in increments, and stirring until the rice becomes creamy, plump, and tender. By the time the final portion of stock is added, the rice should be almost cooked, achieving the desired creamy texture.
Finishing Touches
Once the rice is cooked, take the pan off the heat and stir in butter, grated Parmesan cheese, and chopped parsley. Cover the risotto for a few minutes so it can absorb any remaining liquid as it cools. Give it a final stir, then serve immediately. This final step enhances the risotto's creaminess and flavor, resulting in a dish that's both comforting and satisfying.
