The issue of milk adulteration is not new, but it remains a significant concern for households across India. Adulteration is the act of intentionally adding substances to milk to increase its volume, thickness, or shelf life for profit. Common culprits
include water, which reduces nutritional value, and starch, added to make diluted milk appear thick. More alarmingly, substances like detergent, urea, and synthetic chemicals are sometimes used to create fake milk or manipulate quality tests. Detergents can cause gastrointestinal problems, while urea puts a strain on the kidneys. These additions not only cheat consumers but also pose serious long-term health risks, making it crucial to know that the milk you consume is pure.
What Has Changed: A Renewed Focus on Safety
In response to these persistent issues, there has been a noticeable shift in focus towards stricter enforcement and consumer empowerment. The Food Safety and Standards Authority of India (FSSAI) has intensified its efforts, launching nationwide enforcement drives to inspect milk and milk products like paneer and khoya. In early 2026, the FSSAI issued advisories mandating that all milk producers and vendors must obtain a proper license or registration, aiming to bring more of the unorganised sector under regulatory oversight. On the consumer front, there's a growing emphasis on clear labelling. Recent proposals aim to make nutrition information, such as added sugar and saturated fat, more prominent on packaging. Furthermore, FSSAI has been actively promoting simple do-it-yourself (DIY) tests, empowering consumers to become the first line of defense against adulteration.
Your Home Lab: Simple Tests for Milk Purity
You don't need a science degree to check your milk. FSSAI and other experts recommend several easy tests you can perform with basic household items. To check for water, put a drop of milk on a polished, slanting surface; pure milk flows slowly and leaves a white trail, while diluted milk runs quickly without a trace. For detergent, shake 5-10 ml of milk with an equal amount of water in a bottle. A thick, persistent lather indicates the presence of detergent, whereas pure milk will only form a light foam that quickly disappears. To test for starch, boil a few millilitres of milk, let it cool, and add a drop or two of iodine solution (like Betadine). If the milk turns blue, it contains starch. For urea, mix a teaspoon of milk with half a teaspoon of arhar (pigeon pea) or soybean powder, let it sit for five minutes, and then dip a red litmus paper in it. If the paper turns blue, urea is present.
Beyond Adulteration: The Art of Proper Storage
Ensuring milk safety doesn't end with purity checks; proper storage is essential to prevent spoilage and preserve nutritional value. The most critical factor is temperature. Your refrigerator should be set between 1°C and 4°C. Avoid storing milk in the refrigerator door, which is the warmest part and subject to temperature fluctuations every time it's opened. Instead, place milk on a shelf towards the back, where the temperature is coldest and most stable. Once a container is opened, it's best to consume the milk within about three days. Always keep the milk in its original container to protect it from light, which can degrade vitamins, and to prevent it from absorbing odours from other foods in the fridge.
