The Myth of the Average Plate
Statistically, an average dietary footprint is a useful starting point. It helps scientists and policymakers create broad models of a country's environmental impact from food, which globally accounts for up to a third of all greenhouse gas emissions.
For India, the national average diet-related footprint per person per day is estimated at around 1.3 kg of CO2-equivalent. However, this single number glosses over the vast differences between households. Relying on it is like describing the 'average' Indian family—it’s a theoretical concept that doesn't exist in reality. The dietary habits of a family in a metropolitan city are worlds apart from those in a remote village, and this diversity is where the real story lies.
The Great Divide: Income and Location
Perhaps the biggest factor driving dietary differences is the combination of income and geography. Studies show a stark contrast in the environmental footprints of India's richest and poorest households. A 2024 study found that the carbon footprint of the wealthiest households can be up to eight times higher than that of the least affluent. This isn't just about eating more food; it's about eating different kinds of food. Affluent, urban households tend to consume more processed items, dine out more frequently, and eat more animal products, all of which carry a higher environmental cost. In contrast, rural and lower-income families often rely on locally sourced, seasonal, and grain-heavy diets, which generally have a lower footprint. One study highlighted that if the entire country were to adopt the diet of the wealthiest quartile, environmental impacts could increase by 19-36%.
A Nation of Diverse Palettes
India's incredible cultural and regional diversity is reflected in its food. The environmental impact of these varied diets is significant. For example, a diet rich in rice and mutton will have a considerably higher greenhouse gas and water footprint than one based on millets and pulses. Research analysing traditional Indian dishes found that non-vegetarian meals have a carbon footprint roughly 2.4 times higher than vegetarian ones. Regional differences are also pronounced. The same study noted that South Indian cuisines, which often feature rice, lentils, and vegetables, tend to have a lower average carbon impact compared to other regional diets that may rely more heavily on dairy or different types of grains. These variations mean that a one-size-fits-all approach to promoting sustainable diets would be ineffective.
Beyond Meat vs. Vegetarian
While the vegetarian versus non-vegetarian debate is important, it simplifies a more complex issue. The type of food, not just the category, matters immensely. For instance, the production of dairy is a major contributor to greenhouse gas emissions in India, while rice cultivation has a large green water footprint. Furthermore, food waste is a critical, often overlooked, factor. Edible food that is thrown away carries with it the entire environmental cost of its production—from farm to fork—for no reason. One study in Shanghai found that edible food waste contributed a per capita carbon footprint of 1.17 kg of CO2-equivalent per day, highlighting the scale of the problem in urban settings. Therefore, a household's overall impact is determined not just by what is on the plate, but also by what ends up in the bin.
