As the rain patters against the window, our cravings turn to warm, comforting, and savoury treats. This monsoon, elevate your breakfast or snack time with a modern twist on a classic: the Avocado Cheela, a perfect fusion of health and flavour.
A Modern Twist on a Classic
The humble
besan cheela, a savoury pancake made from gram flour, is a beloved staple in many Indian households, especially during the monsoon. It's quick, protein-packed, and endlessly versatile. By introducing avocado, we transform this classic into something new. The avocado lends a wonderfully creamy texture and a dose of healthy monounsaturated fats, making the cheela even more satisfying and nutritious. Avocados are packed with nutrients like vitamins K, C, E, and potassium, which can support heart health and digestion. This fusion dish is not just a treat for the taste buds but also a powerhouse of goodness, perfect for a cozy, rainy day.
The Perfect Avocado Cheela Recipe
This recipe brings together the earthy flavour of besan with the creamy richness of avocado, enhanced by a simple mix of Indian spices. Ingredients: 1 cup Besan (Gram Flour) 1 ripe Avocado, mashed until smooth 1 small Onion, finely chopped 1 Green Chilli, finely chopped 1-inch Ginger, grated 2 tbsp fresh Coriander, chopped 1/2 tsp Ajwain (Carom Seeds) 1/4 tsp Turmeric Powder 1/2 tsp Red Chilli Powder (or to taste) Salt to taste Approx. 1 cup Water, or as needed Oil or Ghee for cooking Instructions: 1. In a large mixing bowl, combine the besan, ajwain, turmeric powder, red chilli powder, and salt. Mix the dry ingredients well. 2. Add the finely chopped onion, green chilli, grated ginger, and coriander to the bowl. 3. Incorporate the mashed avocado into the flour mixture. 4. Gradually add water while whisking continuously to form a smooth, lump-free batter. The consistency should be of a pouring, pancake-like batter—not too thick and not too thin. 5. Let the batter rest for about 10-15 minutes. This helps the flavours meld together. 6. Heat a non-stick tawa or a cast-iron skillet over medium heat and lightly grease it with oil or ghee. 7. Pour a ladleful of the batter onto the centre of the tawa and gently spread it in a circular motion to form a thin pancake. 8. Drizzle a little oil around the edges and cook for 1-2 minutes, or until the top surface looks cooked and the edges start to lift. 9. Flip the cheela carefully and cook the other side for another minute until it has golden-brown spots. 10. Serve hot with mint chutney, yogurt, or your favourite pickle.
Easy Batter Preparation for Perfect Cheelas
The secret to a great cheela lies in its batter. A lumpy or improperly mixed batter can ruin the texture. To ensure success every time, focus on a few key steps. First, always use fresh, good-quality besan to avoid any bitterness. If your flour seems lumpy, it's a good idea to sift it before mixing. When adding water, do so gradually. Pouring all the water in at once is the most common cause of lumps. Use a whisk to combine the ingredients, as it is more effective at breaking down lumps than a spoon. For an extra smooth consistency, you can even use a blender to mix the initial batter of besan and water before adding the vegetables. Finally, don’t skip the resting period. Letting the batter sit for at least 10 minutes allows the gram flour to absorb the water properly, resulting in a better texture and flavour.
Creative Variations and Serving Ideas
While this recipe is delicious as is, feel free to experiment. For a crispier texture, you can add a tablespoon or two of rice flour or sooji (semolina) to the batter. You can also add other finely chopped or grated vegetables like carrots, spinach, or bell peppers for extra nutrition and crunch. For the filling, a simple stuffing of crumbled paneer spiced with chaat masala can be added before folding the cheela. When it comes to serving, a simple squeeze of lemon or a side of tangy tomato salsa complements the creamy avocado perfectly. These cheelas are best enjoyed hot off the tawa, making them an ideal dish to share with family on a lazy, rainy afternoon.
