The Decades-Old War on Fat
For a long time, dietary guidelines across the world, including in Canada and the US, recommended low-fat or fat-free dairy products. The logic seemed straightforward: full-fat dairy contains saturated fat, and high intake of saturated fat was linked
to higher levels of 'bad' LDL cholesterol, a known risk factor for cardiovascular disease. This led to a boom in low-fat yogurts, skimmed milk, and reduced-fat cheeses, all designed to help consumers reap the benefits of dairy — like calcium and protein — without the perceived risks of the fat. This advice was based on a nutritional philosophy that focused on individual nutrients. Fat, especially saturated fat, was singled out as a villain to be avoided whenever possible.
What New Research Reveals
Recent scientific evidence is painting a more complex and nuanced picture. A growing number of studies are finding that the consumption of full-fat dairy is not associated with the negative health outcomes previously feared. For example, a Canadian study from the University of Toronto published in The Journal of Nutrition in mid-2026 found that adults who consumed three daily servings of full-fat dairy showed no adverse effects on body weight, body fat, or cholesterol levels. In fact, participants who ate more dairy saw improvements in blood pressure and increased their intake of important nutrients like protein, calcium, and vitamin D. Other long-term studies have found that people who regularly consumed whole-fat dairy in their youth had a lower risk of certain markers of heart disease decades later. Some meta-analyses and reviews have concluded that dairy consumption, regardless of its fat content, has a neutral or even potentially favourable association with cardiometabolic health.
Beyond Nutrients: The 'Dairy Matrix'
So why the discrepancy? The answer may lie in a concept called the "food matrix." This idea suggests that we shouldn't judge a food by its individual nutrients in isolation. Instead, the overall structure of the food — how its fats, proteins, vitamins, and minerals interact — determines its ultimate effect on health. Dairy is a prime example. The nutrients in milk, cheese, and yogurt are bound together in a complex structure. This matrix can influence how nutrients are digested and absorbed. For instance, the fat in dairy may help the body absorb fat-soluble vitamins like D and K. Furthermore, fermented dairy products like yogurt and cheese introduce another layer of complexity, with probiotics and fermentation byproducts that can offer their own health benefits. This explains why the saturated fat from a slice of cheese might behave differently in the body than saturated fat from a highly processed snack food.
A Place on the Indian Plate
This evolving science doesn't mean we should consume full-fat dairy with abandon. The key takeaway is balance and context. In India, where dairy products like dahi (curd), paneer, and ghee are dietary staples, this new perspective is particularly relevant. It suggests that fearing the natural fat in these traditional foods might be unnecessary, provided they are part of a wholesome eating pattern. The focus should be on the overall diet — one that is rich in fruits, vegetables, whole grains, and lean proteins. A bowl of full-fat dahi or a serving of paneer can be a satisfying and nutrient-dense part of a balanced meal. It’s also important to choose unsweetened dairy products, as added sugars can negate the potential health benefits. While some research on full-fat dairy and type 2 diabetes has shown mixed or even adverse results in certain populations, other studies suggest fermented products like yogurt could be protective. This highlights the importance of the type of dairy consumed.
