While you can use sweetened yoghurt, starting with plain curd allows you to control the sweetness yourself with honey, jaggery, or the natural sweetness of the fruit. Summer Sensations: March to June
Summer in India is synonymous with some of its most beloved fruits. This is the season to embrace vibrant, juicy flavours that are both delicious and hydrating. The undisputed king, Mango, is a must. Its sweet, golden flesh pairs beautifully with the tang of yoghurt. For a classic combination, top your bowl with cubes of Alphonso or Kesar mango and a sprinkle of chopped pistachios and cardamom powder. Another summer star is Lychee. Their soft texture and sweet-sour notes complement creamy yoghurt wonderfully. For a simple monsoon bowl, combine sliced peaches, a few jamuns, and a drizzle of honey.

As the air turns cooler, the fruit markets fill with a different array of colours and textures. Winter is the season for robust, nutrient-dense fruits.
