The Purity Problem in India
Milk adulteration is a significant and ongoing issue in India. To increase volume and profit margins, substances are often added to fresh milk before it reaches your home. The most common adulterant is water, which not only dilutes the nutritional value
but can also introduce harmful pathogens if it's not clean. Beyond water, more dangerous substances like detergent, urea, and starch are used to mimic the thickness, protein content, and consistency of pure milk. While regulatory bodies like the FSSAI conduct surveys and set standards, adulteration remains widespread enough to be a valid concern for households. The immediate health effects can include gastrointestinal problems, while long-term consumption of certain chemical adulterants may lead to kidney damage or even cancer.
Simple Home Tests for Common Adulterants
You don't need a laboratory to perform basic purity checks. The FSSAI has validated several simple tests that can be done at home. For detecting water, place a drop of milk on a polished, slanted surface. Pure milk will flow slowly, leaving a white trail, while milk diluted with water will run down quickly without leaving a mark. To check for detergent, shake 5-10 ml of milk with an equal amount of water in a bottle. A thick, persistent lather indicates the presence of detergent, whereas pure milk will only form a thin layer of foam that disappears quickly.
Detecting Starch and Urea
Starch is often added to increase the density of watered-down milk. To test for it, boil a few millilitres of milk, let it cool, and then add a drop or two of iodine solution, which is available at most pharmacies. If the milk turns blue, it confirms the presence of starch. Urea, another common adulterant used to artificially boost the 'protein' reading of milk, can cause kidney problems. You can test for it by mixing a teaspoon of milk with half a teaspoon of soybean or arhar (pigeon pea) powder. Shake the mixture well. After five minutes, dip a red litmus paper into it. If the paper turns blue, it indicates the presence of urea.
The Importance of Proper Storage
Even pure milk can become unsafe if not stored correctly. Milk is a perishable product that provides an ideal environment for bacteria to grow. The primary rule of storage is to keep it cold. Your refrigerator should be set between 0°C and 4°C. Store milk on the main shelves, preferably at the back where the temperature is coldest and most stable, rather than in the refrigerator door where the temperature fluctuates with every opening. Always keep the milk container tightly sealed to prevent it from absorbing odours from other foods.
Handling Different Types of Milk
How you store milk also depends on its type. Pasteurized milk, commonly sold in pouches, should be refrigerated immediately and is best consumed within a few days of opening. It's also a good practice to boil the milk upon receiving it to kill any bacteria. UHT (Ultra-High Temperature) milk, sold in Tetra Paks, is shelf-stable and can be stored at room temperature until it is opened. Once opened, however, it must be refrigerated and consumed within a few days. Do not return any unused milk that has been left at room temperature back into the main container, as this can introduce bacteria and spoil the entire batch.
