A New Study Enters the Conversation
Now, new research from the University of Toronto is adding a surprising twist to the story. A 12-week study involving 74 adults with overweight or obesity investigated the real-world effects of consuming full-fat dairy. Participants were split into different groups, with some consuming three servings of full-fat dairy per day. Researchers tracked key health markers, including body weight, cholesterol levels, blood pressure, and body fat, to see if the conventional wisdom held up under direct scrutiny. The goal was to move beyond assumptions about saturated fat and observe what actually happens when people include full-fat dairy in their daily diet.
Surprising Findings on Health Markers
The results challenged long-held beliefs. The group consuming three daily servings of full-fat dairy showed no meaningful increases in weight, body fat, or harmful cholesterol levels compared to a low-dairy group. In fact, those who ate more dairy saw some positive changes, including improvements in blood pressure and a higher intake of essential nutrients like calcium, protein, and vitamin D. The findings suggest that the saturated fat from dairy might not have the negative impact on cardiometabolic health that was once feared, prompting scientists to look closer at the food itself rather than just its fat content.
It's All About the 'Dairy Matrix'
So why didn't the full-fat dairy lead to the expected negative outcomes? The answer may lie in what researchers call the "dairy matrix". This theory suggests that a food's health effect is about more than just its individual nutrients. Dairy is a complex food containing proteins (casein and whey), calcium, and fats, all bound together in a unique physical structure. This matrix appears to influence how nutrients are digested and absorbed, potentially altering the effect of its saturated fat. For example, the calcium in cheese can bind to fatty acids in the gut, reducing their absorption. This matrix effect helps explain why cheese doesn't raise LDL cholesterol in the same way as an equivalent amount of fat from butter.
So, Should You Switch to Full-Fat?
This study adds to a growing body of evidence suggesting that full-fat dairy can be part of a healthy diet without increasing risk for heart disease or weight gain for most people. However, this doesn't mean it's time to add unlimited butter and cheese to every meal. Experts caution that the overall dietary pattern is what matters most. A few servings of full-fat dairy can comfortably fit within a diet rich in fruits, vegetables, whole grains, and lean proteins.
