So, why quinoa? Unlike rice, quinoa is a complete protein, meaning it contains all nine essential amino acids. It's also significantly richer in fibre, magnesium, iron, and other micronutrients. This makes quinoa dosa an excellent choice for those looking for a more nutrient-dense meal. Many recipes are also naturally gluten-free. The batter can be prepared in several ways, with some recipes calling for fermentation similar to traditional dosa, while others offer a quicker, no-ferment method. Regardless of the method, the result is a batter that cooks into a wonderfully crispy and flavourful crepe.
The Perfect Quinoa Dosa Batter
Creating the perfect quinoa dosa starts with the batter. Most recipes involve soaking the quinoa along with a mix of lentils like urad dal (split black gram) and sometimes chana dal (split Bengal gram) for about four to six hours. The soaked ingredients are then ground into a smooth, pourable paste. For an instant version, you can grind, add salt, and use the batter right away or after a short rest. For a more traditional flavour, allow the batter to ferment in a warm place for six to eight hours, or overnight. This fermentation process adds a subtle tangy flavour characteristic of classic dosas. A key tip for a crispy result is to ensure the batter isn't too thick and the tawa, or skillet, is medium-hot.
A Savoury Paneer Bhurji Filling
The filling is just as important as the dosa itself. A classic paneer bhurji, or scrambled paneer, provides a creamy and spicy contrast to the crisp shell. To prepare it, heat a little oil in a pan and add cumin seeds. Once they sizzle, add finely chopped onions and sauté until translucent. Next, add ginger-garlic paste, chopped tomatoes, and a blend of spices like turmeric, red chilli powder, and coriander powder. Cook until the tomatoes soften and the oil begins to separate from the masala. Finally, add the crumbled or grated paneer, mix everything well, and cook for just a couple of minutes until the paneer is heated through. A garnish of fresh coriander leaves adds a final burst of freshness.
Bringing It All Together
With your batter and filling ready, it's time to head to the tawa. Heat your skillet over medium heat. Lightly grease it with oil or ghee. Once hot, pour a ladleful of the quinoa batter onto the centre and spread it outwards in a circular motion to form a thin crepe. Drizzle a little oil around the edges and cook until the bottom turns golden brown and the edges start to lift from the pan. Spoon a generous amount of the paneer bhurji filling onto one half of the dosa. Fold the other half over the filling and press down gently.
