The most common substance used to adulterate milk is water, which reduces its nutritional value. However, more hazardous materials are sometimes added to mimic the consistency, thickness, or shelf-life of pure milk. These can include detergents, starch,
urea, and even preservatives like formalin. While some adulterants are added to increase volume and profit, others like detergents can cause gastrointestinal issues, and long-term consumption of milk with certain chemicals can lead to more serious health complications. Knowing what to look for is the first step in safeguarding your household's health.
Simple Purity Tests for Your Kitchen
The Food Safety and Standards Authority of India (FSSAI) has outlined several easy tests you can perform at home. For water adulteration, put a drop of milk on a polished, slanting surface. Pure milk will flow slowly or stay put, leaving a white trail, whereas milk diluted with water will flow down quickly without leaving a mark. To test for detergent, take 5-10 ml of milk, add an equal amount of water, and shake it vigorously. If a thick, persistent foam forms, it may indicate the presence of detergent. Pure milk will only form a thin layer of foam that quickly disappears.
Checking for Starch and Urea
Starch is sometimes added to increase the solid content of diluted milk. To detect it, boil 2-3 ml of milk and let it cool. Then, add a few drops of an iodine solution (commonly found in first-aid kits). The milk turning blue indicates the presence of starch; otherwise, it will remain unchanged or slightly yellow. For urea, a more complex but still doable test involves mixing 5 ml of milk with soybean or arhar dal powder. After five minutes, dip a red litmus paper into the mixture. If it turns blue, urea is present. These adulterants can pose health risks and are important to identify.
Identifying Synthetic Milk
Synthetic milk, made with chemicals and urea, poses a significant health risk. It can often be identified by its physical properties. It may have a bitter or soapy taste and a distinct chemical smell when you rub a little between your fingers. When heated, synthetic milk often turns yellowish. Pure milk has a naturally mild, sweet taste and doesn't change color dramatically upon boiling, though it will form a creamy layer (malai) on top as it cools.
The Importance of Proper Storage
Even pure milk can become unsafe if stored improperly. The key is maintaining a consistently cold temperature to slow bacterial growth. Milk should be stored on a shelf towards the back of the refrigerator, where the temperature is coldest and most stable, not in the fridge door where it is exposed to frequent temperature fluctuations. The ideal storage temperature is between 0°C and 4°C. Always make sure milk containers are tightly sealed to prevent them from absorbing odours from other foods.
Smart Storage Habits
To get the most out of your milk, pick it up last during your grocery run and refrigerate it as soon as you get home. Follow the 'first in, first out' rule: use the milk you bought earliest first. Once a container is opened, it's best to consume it within three days for optimal freshness and safety. Never return unused milk from a serving jug back into the original container, as this can introduce bacteria and lead to faster spoilage. Following these simple rules ensures that the milk you drink is not only pure but also fresh.
