Meet the new star of the vegetable aisle: a potato that’s not just a humble staple, but a nutritional powerhouse. India's Kufri Jamunia is turning heads with its vibrant purple flesh, which is packed with impressive health benefits.
A Potato with a Purple Heart
Imagine a potato that
looks as striking as a jamun or a blueberry. That's the Kufri Jamunia, a new variety developed by the Indian Council of Agricultural Research's Central Potato Research Institute (ICAR-CPRI) in Shimla. Officially released in 2024, this potato is unique because its deep purple colour isn't just on the skin; it runs right through the flesh. This means its nutritional goodness isn't lost when you peel it. Developed as a part of a larger initiative to combat 'hidden hunger'—a condition where people get enough calories but lack essential micronutrients—this potato is a marvel of biofortification, a process of breeding crops to have higher nutritional value.
The Power of Anthocyanins
The brilliant purple hue of the Kufri Jamunia comes from compounds called anthocyanins. These are the same powerful antioxidants found in other deep-coloured foods like blueberries, blackberries, and red cabbage. Antioxidants are like the body's personal defence squad; they help neutralise unstable molecules called free radicals, which can cause cell damage and contribute to inflammation and chronic diseases over time. Research suggests that diets rich in anthocyanins may support heart health by helping to maintain stable blood pressure and improve artery flexibility. Some studies have also linked these compounds to better gut health, as they can act as prebiotics, feeding the good bacteria in your digestive system.
A Surprising Vitamin C Boost
Beyond its antioxidant content, Kufri Jamunia is a standout source of Vitamin C. A 100-gram serving contains approximately 42.75 mg of Vitamin C, which is significantly higher than the 23.15 mg found in the same amount of a regular potato. This vital nutrient is crucial for a healthy immune system, skin health, and acting as another line of antioxidant defence within the body. In addition to Vitamin C, this biofortified potato also delivers higher levels of essential minerals like iron and zinc compared to its conventional counterparts, making it a more nutrurally complete staple.
From the Lab to Your Plate
The development of Kufri Jamunia is a story of agricultural innovation aimed at enhancing India's nutritional security. Scientists at ICAR-CPRI created this variety to be not only nutritious but also practical for farmers. It's a high yielding crop, producing 32–35 tonnes per hectare, and is recommended for cultivation across the North Indian plains. It has a medium maturation period of 90–100 days and good storage qualities, with a dormancy of 6–8 weeks, meaning the tubers don't sprout too quickly after harvest. In the kitchen, its 'mealy' or floury texture makes it incredibly versatile. It's suitable for a wide array of traditional Indian dishes, including curries, parathas, and puris. Innovatively, it can also be processed into purple flour, semolina (suji), and dalia, ideal for making everything from halwa and upma to colourful baked goods.
