Why Milk Purity is a National Concern
Milk adulteration is a persistent issue across India. Driven by profit, some suppliers dilute milk or add substances to increase its volume, thickness, or shelf life. The most common adulterant is water, which, while not directly toxic, reduces the milk's
nutritional value and can introduce harmful bacteria if it's not clean. More dangerous adulterants include detergent, starch, and urea, which are added to mimic the appearance and consistency of pure milk. Studies by the Food Safety and Standards Authority of India (FSSAI) have highlighted how widespread this problem is, making it crucial for consumers to be vigilant. These additions can lead to health problems ranging from gastrointestinal issues to more severe long-term organ damage.
Simple Home Test 1: The Water Test
The simplest and most common form of adulteration is adding water. While this seems harmless, it cheats you of nutrition. Luckily, it's easy to spot. The 'Slant Test' is a reliable method recommended by FSSAI's DART (Detect Adulteration with Rapid Test) initiative. Place a drop of milk on a polished, slanting surface, like a steel plate. Pure milk will flow down slowly, leaving a white trail behind it. Milk that has been diluted with water will flow down immediately and leave no mark, much like a drop of water would.
Simple Home Test 2: Detecting Detergent
Detergent is sometimes added to create a stable, frothy foam on diluted milk, making it look rich and thick. Consuming milk with detergent can cause food poisoning and other gastrointestinal complications. To test for it, take about 5-10 ml of milk in a clear bottle or glass and add an equal amount of water. Seal the container and shake it vigorously for about 30 seconds. If a dense, stable lather forms that doesn't disappear quickly, it's a sign that detergent may be present. Pure milk will only form a thin layer of foam that quickly dissipates.
Simple Home Test 3: Spotting Starch
Starch, often in the form of rice flour or potato powder, is added to increase the solids content of diluted milk, making it feel thicker. This not only compromises nutritional value but can also cause digestive problems, especially for infants. To check for starch, boil 2-3 ml of your milk sample. Let it cool down, then add a couple of drops of an iodine solution (tincture of iodine, available at pharmacies, works well). If the milk turns blue or purplish, it confirms the presence of starch. Pure milk will not change colour or may turn slightly yellowish.
Beyond Adulteration: The Importance of Safe Storage
Even pure milk can become unsafe if not stored correctly. Milk is a rich medium for bacterial growth, and improper storage is a primary cause of spoilage and foodborne illness. Refrigeration is the single most important factor in maintaining milk's safety and quality. The goal is to keep the milk consistently cold to slow down bacterial activity. This means more than just putting it in the fridge; where you store it and how you handle it matter just as much.
Best Practices for Storing Milk
For optimal freshness, milk should be stored at temperatures below 4°C (40°F). The best place for this is the back of the main compartment of your refrigerator, not the door, where temperatures fluctuate every time it's opened. Always keep the milk container tightly sealed to prevent it from absorbing odours from other foods. When you use milk, pour out what you need and immediately return the container to the fridge; never leave it sitting out on the counter. Also, avoid mixing leftover milk from a glass back into the original container, as this can introduce bacteria.
Recognising Spoiled Milk
Your senses are your best tool for detecting spoiled milk. Before using, always give it a quick sniff. A sour or off-putting odour is the most obvious sign that it's gone bad. Visually, look for any changes in consistency. If the milk appears curdled, lumpy, or has a yellowish tint, it should not be consumed. Even if it passes the look and smell test, a small sip can confirm its taste. If it's sour, it's time to discard it. Trust your instincts—when in doubt, throw it out.
