Aromatic Vegetable Biryani
In many Indian rice dishes, cloves are a team player, not a soloist. For a vegetable biryani or pulao, whole cloves are bloomed in hot oil or ghee along with other whole spices like cinnamon sticks, cardamom pods, and bay leaves. This technique gently
infuses the oil, which then coats every grain of rice, creating a layered aromatic foundation. The cloves impart a warm, sweet background note that balances the other spices and complements the vegetables. For a dish serving four, just two or three cloves are enough to add depth without overwhelming it. The trick is to let them perfume the dish, and most people remove them before serving to avoid the intense bite of a whole clove.
Warming Lentil Soup
A simple lentil soup becomes a deeply comforting and fragrant meal with the addition of a few cloves. As the lentils simmer with vegetables like carrots, celery, and onions, adding two or three whole cloves to the broth works wonders. They release their flavour slowly, infusing the entire pot with a subtle warmth that is both complex and satisfying, especially on a cool day. The earthy flavour of the lentils is a perfect match for the spicy sweetness of the cloves. Just as with rice dishes, it's best to remove the whole cloves before blending or serving to control the intensity.
Spiced Butternut Squash
Root vegetables and winter squashes have a natural sweetness that pairs beautifully with warm spices. Butternut squash soup, in particular, is a perfect canvas for cloves. While the squash simmers with onion, garlic, and vegetable broth, add a few whole cloves. Their flavour seeps into the soup, enhancing the squash's earthy sweetness and adding a festive, aromatic quality. The result is a soup that feels rich and layered, with the clove providing a warm counterpoint to the creamy texture. When used in a puree, ground cloves also work well, but should be added sparingly as the flavour is more potent.
Hearty Chana Masala
Cloves are a cornerstone of many Indian spice blends, including the garam masala that often finishes a Chana Masala. In this beloved chickpea curry, cloves play a crucial role in the foundational spice mix. Whole cloves are often fried in oil at the beginning to create a flavourful base, or ground cloves are added with other powdered spices like cumin, coriander, and turmeric. The pungent warmth of the cloves cuts through the richness of the tomato and onion gravy, adding a layer of complexity that defines the dish's signature taste. It proves that cloves are essential for creating the deep, robust flavour profile of many classic curries.
Sweet & Spicy Molasses Cookies
Cloves shine just as brightly in sweet recipes as they do in savoury ones. Their warm, spicy notes are a classic component in baked goods like gingerbread and spiced cookies. In a chewy molasses cookie, ground cloves are combined with ginger and cinnamon to create an irresistibly cozy treat. The sharp, pungent flavour of the clove balances the deep, slightly bitter sweetness of the molasses. Unlike in savoury dishes where whole cloves infuse flavour, baking typically calls for ground cloves to ensure the spice is evenly distributed throughout the dough, providing a consistent warmth in every bite.
