The Classic Roast: Simple and Savoury
Roasting is perhaps the easiest way to bring out the deep, caramelised flavour of sweet potatoes. The high, dry heat of the oven concentrates their natural sugars, resulting in tender, flavourful chunks that are slightly crispy on the outside. For a perfect
roast, simply wash and cube your sweet potatoes into uniform one-inch pieces. You can leave the skin on for extra fibre and nutrients. Toss them in a bowl with a tablespoon or two of olive oil, ensuring they are lightly coated. Season generously with salt, pepper, and any other spices you enjoy — smoked paprika and garlic powder are excellent savoury choices, while cinnamon adds a touch of warmth. Spread the seasoned cubes in a single layer on a baking sheet, making sure not to overcrowd the pan, which can cause them to steam rather than roast. Bake in a preheated oven at 220°C for about 25 to 35 minutes, or until they are tender when pierced with a fork and beautifully browned. These roasted pieces are a fantastic side dish, a great addition to salads and grain bowls, or a simple snack on their own.
Creamy Mash: A Comfort Food Staple
For a comforting and velvety side dish, nothing beats a classic mashed sweet potato. Unlike the baked or roasted versions, boiling or steaming the potatoes first results in a soft, moist flesh that’s perfect for mashing into a smooth purée. To start, peel about 1.5 kilograms of sweet potatoes and cut them into evenly sized chunks. Place them in a large pot and cover with water, bringing it to a boil. Let them simmer for 15-20 minutes until they are very tender. Once cooked, drain the potatoes thoroughly and return them to the hot pot for a minute to let any excess moisture evaporate. For a rich and creamy texture, add a few tablespoons of butter and a splash of warm milk or cream. Mash everything together with a potato masher or an electric mixer until you reach your desired consistency. While they are naturally sweet, you can enhance the flavour with a teaspoon of cinnamon, a pinch of nutmeg, or even a savoury twist with roasted garlic and fresh thyme. It’s a versatile base that can be tailored to be either sweet or savoury.
Healthy Fries: A Crispy Baked Snack
If you're craving a healthier alternative to traditional French fries, baked sweet potato fries are a fantastic choice. The key to achieving a crispy finish without deep-frying lies in a few simple tricks. First, cut the peeled sweet potatoes into long, thin strips, about a quarter-inch thick. For extra crispiness, some cooks recommend soaking the cut fries in cold water for at least 30 minutes to remove excess starch. After soaking, pat them completely dry. In a large bowl, toss the fries with a light coating of olive oil and, for the secret weapon, a tablespoon of cornstarch, which helps absorb moisture and create a crispy exterior. Season them with salt, pepper, or your favourite spice blend. Spread the fries in a single, even layer on a baking sheet lined with parchment paper, being careful not to let them overlap. Bake at 220°C for about 20-30 minutes, flipping them halfway through, until they are golden brown and crisp on the edges. Serve them immediately for the best texture. They make for a delicious, guilt-free snack or a perfect partner for burgers and sandwiches.
