Fermented foods like yogurt, kimchi, and miso are packed with live beneficial bacteria, or probiotics, which help promote a healthy balance of microbes in your gut, leading to better digestion and nutrient absorption.
The Power of 20g Protein
Pairing these gut-friendly heroes with adequate protein creates a complete, satisfying meal. Aiming for around 20 grams of protein per meal helps with satiety, keeping you fuller for longer, and supports muscle repair and maintenance. The good news is that hitting this target is easy with a single sheet pan. Lean protein sources like a skinless chicken breast, a salmon fillet, a block of tofu, or a generous serving of chickpeas can all comfortably provide this amount, and they roast beautifully alongside vegetables.
Sheet-Pan Salmon and Asparagus
This combination is a classic for a reason. Salmon is a fantastic source of protein and anti-inflammatory omega-3 fatty acids. Asparagus and a handful of chickpeas provide plenty of fibre. To prepare, simply toss asparagus spears and cooked chickpeas with olive oil, salt, and pepper on a sheet pan. Place salmon fillets on the same pan, season with lemon and dill, and roast everything at 200°C until the salmon is cooked through, usually about 12-15 minutes. Tandoori Tofu with Sweet Potatoes
This plant-based meal is bursting with flavour and gut-loving ingredients. Tofu provides the protein, while sweet potatoes offer a healthy dose of fibre. Cube a block of firm tofu and toss it with tandoori paste or spice mix. Chop sweet potatoes and cauliflower into bite-sized pieces and toss with oil and a little seasoning. Spread everything on a single sheet pan and roast until the vegetables are tender and the tofu is browned. To incorporate a fermented element, you can use a yogurt-based tandoori marinade or serve the finished dish with a side of kimchi for a spicy, tangy crunch.
Chicken with Broccoli and Miso Glaze
This recipe brings in the deeply savoury, umami flavour of miso, a fermented soybean paste. Whisk together white miso paste, a touch of honey or maple syrup, soy sauce, and ginger to create a glaze. Chop boneless, skinless chicken thighs and broccoli florets, and toss them with about half the glaze. Spread on a sheet pan and roast until the chicken is cooked. Drizzle the remaining glaze over the top before serving. The chicken provides the protein, the broccoli is packed with fibre, and the miso offers probiotic benefits, though it's important to note that very high heat can diminish some of the live cultures.
Tips for One-Pan Success
To master the art of the sheet-pan dinner, keep a few things in mind. First, don't overcrowd the pan; give your ingredients space to roast rather than steam. Second, consider the cooking times of different ingredients. Harder vegetables like potatoes and carrots need a head start, so put them in the oven for 15-20 minutes before adding quicker-cooking items like chicken, fish, or softer vegetables like bell peppers and broccoli.
