Nagaland: Pork with Fermented Bamboo Shoots
In Nagaland, pork and bamboo shoots are a classic pairing, creating a dish that is deeply savoury, smoky, and pungent. The star is often fermented bamboo shoot, which lends a powerful, tangy flavour that cuts through the richness of the fatty pork. Typically
prepared with minimal spices, the focus is on the core ingredients: pork, bamboo shoots, fiery chillies like the Bhut Jolokia (ghost pepper), and garlic. Often cooked until the water evaporates and the fat renders out, the resulting dish is a thick, aromatic curry that is a cornerstone of Naga celebratory meals and everyday comfort food.
Assam: Khorisa in Fish and Chicken Curries
Assamese cuisine celebrates bamboo shoots in the form of 'khorisa', which can be fresh or fermented. One popular preparation is Khorisa Tenga, a tangy fish curry where the sourness of the fermented bamboo beautifully complements the fish. Another beloved dish is 'Baanhgajor Lagot Kukura', a chicken curry cooked with fresh bamboo shoots, creating a spicy and flavourful gravy. Whether used fresh for its crisp bite or fermented for its signature pungency, khorisa is a key ingredient that defines many traditional Assamese curries and stews.
Manipur: Eromba and Soibum
Manipur offers a unique take on bamboo shoots with its famous dish, Eromba. This is not a curry but a flavour-packed chutney or mash made from boiled vegetables, chillies, and the key ingredient: fermented fish known as 'ngari'. Fermented bamboo shoots, called 'soibum', are a common and beloved addition, lending their distinct aroma and taste to the mash. The ingredients are boiled and then mashed together, often with potatoes, to create a coarse, intensely flavourful side dish that is a staple in Meitei households.
Karnataka: Kanile and Baimbale Curry
Moving south to the Malnad and coastal regions of Karnataka, bamboo shoots are known as 'kanile' or 'kalale'. Here, they are often used fresh during the monsoon season. A popular dish is Kanile Curry, or Baimbale Kari, a coconut-based gravy that is rich and subtly spiced. The fresh bamboo shoots are first processed by soaking them for a couple of days to remove bitterness before being cooked. The curry often includes ingredients like coconut, mustard seeds, garlic, and sometimes tamarind, creating a delicious side dish typically enjoyed with rice or traditional rice flatbreads (akki rotti).
West Bengal & Tripura: Ghonto and Chakhwi
In West Bengal, particularly in the hilly regions, bamboo shoots are used in various preparations. A notable dish is 'Bansh Koriler Ghonto', often a mixed vegetable dish where bamboo shoots play a central role, sometimes cooked with fish head ('maacher matha diye') for added flavour. In neighbouring Tripura, 'Chakhwi' is a traditional delicacy. It's a healthy, soupy dish made with bamboo shoots, green papaya, and other seasonal vegetables. The preparation is typically low on oil and relies on the natural flavours of the ingredients, making it a light yet satisfying meal.
