Aromatic Vegetable Biryani
There is no true biryani without the fragrance of whole spices, and cloves are a non-negotiable part of this foundation. When making a vegetable biryani, whole cloves are often tempered in hot ghee or oil along with cinnamon, cardamom, and bay leaves.
This initial step, called tadka, creates a fragrant base that infuses the entire dish. As the rice and vegetables are layered and slow-cooked on 'dum', the aroma from the cloves permeates every grain, lending a signature sweet and peppery note that balances the other spices. This isn't a dish where clove is a background note; it's a key player that makes the experience authentic.
Hearty Chana Masala
A classic North Indian chickpea curry, chana masala, derives its characteristic warmth from a blend of spices where cloves play a crucial role. Often used both whole during the tempering stage and ground as part of a homemade or store-bought garam masala powder, cloves provide a deep, aromatic undertone that cuts through the tanginess of the tomatoes. Recipes often call for adding whole cloves to hot oil at the beginning to release their essential oils. This ensures the flavour is layered and complex, not just sprinkled on at the end. The result is a comforting, robust curry that feels like it has been simmering for hours, even when it comes together quickly.
Warming Spiced Lentil Soup
A simple lentil soup can be elevated from basic to brilliant with the addition of warming spices. Cloves, with their intense flavour, add a surprising depth to earthy lentils. In many recipes, whole or ground cloves are toasted with other seeds like cumin and coriander before being stirred into the soup base of onions, carrots, and celery. This process blooms the spices, making them more fragrant. Combined with ingredients like coconut milk for creaminess and a touch of cinnamon or cardamom, cloves help create a soup that is both nourishing and wonderfully complex. It’s a perfect way to make a pantry staple feel like a gourmet meal.
Clove-Infused Roasted Vegetables
Moving beyond traditional curries and rice, cloves can add a wonderful twist to roasted vegetables. Root vegetables like sweet potatoes, carrots, and butternut squash are particularly well-suited to this treatment. A pinch of ground clove tossed with the vegetables, olive oil, salt, and other complementary spices like cinnamon and rosemary can create an incredibly aromatic and flavourful side dish. The warmth of the clove enhances the natural sweetness of the roasted vegetables, giving them a festive and sophisticated feel. For a subtler infusion, a few whole cloves can be added to the roasting pan and removed before serving.
Soothing Masala Chai
Not a meal, but an essential part of the culinary experience, masala chai is perhaps one of the most famous showcases for clove. In an authentic masala chai, whole cloves are simmered along with water, milk, black tea leaves, and other spices like green cardamom pods, cinnamon sticks, and fresh ginger. The cloves release their sweet, pungent, and slightly peppery flavour into the liquid, contributing to the iconic beverage's warming and invigorating properties. This spiced tea demonstrates the versatility of cloves, proving they are just as at home in a comforting drink as they are in a hearty main course.
