The issue of milk adulteration is a persistent concern across India. From local vendors to larger supply chains, enforcement agencies frequently uncover instances where milk is diluted or contaminated. Recent crackdowns in states like Maharashtra, Gujarat,
and Telangana have revealed rackets involved in adulterating milk with everything from water to more harmful substances. Adulterants are added to increase volume, extend shelf life, or mimic the consistency of pure milk, often to boost profits at the expense of consumer health. Common substances found include water, starch, detergent, and urea, which can diminish the nutritional value of milk and pose significant health risks, including kidney damage and digestive issues.
What Recent Updates Reveal
While there isn't one single 'latest' national report, a combination of ongoing surveillance, FSSAI advisories, and state-level enforcement actions paint a clear picture. Data has shown that a significant percentage of milk samples tested fail to meet the standards set by the Food Safety and Standards Authority of India (FSSAI). For instance, one report highlighted that in FY25, 38% of tested samples were found to be adulterated. Recent FSSAI campaigns focus on empowering consumers with knowledge, including simple home tests to detect common adulterants. Meanwhile, authorities are also exploring technological solutions, like end-to-end traceability, to fight adulteration at the source.
Simple Home Tests for Common Adulterants
You don't always need a laboratory to spot the most common types of milk tampering. FSSAI has validated several simple tests you can perform in your kitchen. Test for Water: Place a drop of milk on a polished, slanting surface like the back of a steel plate. Pure milk will flow slowly, leaving a white trail behind. Milk adulterated with water will flow down immediately without leaving a mark. Test for Detergent: Take 5-10 ml of milk, add an equal amount of water, and shake it vigorously. If a dense, persistent lather forms (like soap bubbles), it may contain detergent. Pure milk will only form a thin layer of foam that quickly disappears. Test for Starch: Boil 2-3 ml of milk with a little water and let it cool. Add a couple of drops of tincture of iodine, which is available at pharmacies. If the solution turns blue, it indicates the presence of starch, which is often added to make diluted milk appear thick.
Checking for More Dangerous Substances
While some adulterants are easy to spot, others like urea require slightly more effort. To test for urea, you can mix a teaspoon of milk with half a teaspoon of soybean or arhar (pigeon pea) powder and shake well. After five minutes, dip a red litmus paper into the mixture. If it turns blue, it indicates the presence of urea. For even more dangerous chemicals like formalin, which is sometimes used as a preservative, home testing is difficult and less reliable. These tests serve as preliminary checks; if you have strong suspicions, it's best to report it and rely on professional lab testing.
Beyond Adulteration: The Importance of Safe Storage
Even pure milk can become unsafe if not stored correctly. Improper storage is a major cause of bacterial contamination, leading to spoilage and potential illness. Bacteria can multiply rapidly in milk, especially when it's left at room temperature. The key to preventing this is maintaining a consistently cold temperature. Psychrotrophic bacteria, which can grow even at refrigeration temperatures, are a primary cause of spoilage, breaking down milk's proteins and fats. This can lead to souring, curdling, and the development of off-flavours. Always ensure your refrigerator is set at or below 4°C to minimize bacterial growth.
Best Practices for Milk at Home
Once the milk is in your home, its safety is in your hands. First, always buy milk from trusted, licensed sources. Immediately refrigerate milk upon purchase. If you use loose milk, it is advisable to boil it before consumption to kill any harmful bacteria. Once boiled and cooled, store it in a clean, covered container in the fridge. Avoid leaving milk out on the counter for extended periods. Freshly pumped breast milk can be left at room temperature for up to four hours but should be refrigerated or frozen if not used promptly. When storing milk, keep it in the main part of the refrigerator, not the door, where the temperature is more stable. Never mix old milk with fresh milk in the same container.
