Why Your Skillet Rusts So Quickly
Rust is the result of a simple chemical reaction: iron, water, and oxygen. Your cast iron pan is, at its core, a block of iron. When water is left on its surface, even in microscopic droplets, it reacts with the air and the metal to form iron oxide, or rust.
This process can happen surprisingly fast. The protective layer on your skillet, known as seasoning, is formed by oil baked into the pan's surface. This layer acts as a barrier against moisture, but it's not invincible. Tiny gaps or thin spots in the seasoning can let water in, which is why a pan that’s been air-dried or left to soak is a prime candidate for rust.
The Mistake of Air-Drying
Many of us are used to washing dishes and leaving them in a rack to air-dry. With cast iron, this is a recipe for disaster. Even after a thorough wipe with a towel, a small amount of moisture can remain in the pan's porous surface. Leaving the skillet to air-dry gives that moisture plenty of time to work with oxygen and start the rusting process. This is why you might find your pan looking perfect when you put it away, only to discover rust spots the next morning. Never soak your skillet in the sink or put it in the dishwasher, as prolonged exposure to water will almost certainly lead to rust.
The Best Method: Stovetop Heating
The most effective way to ensure your cast iron is completely dry is to use heat. After washing your skillet with a brush and hot water (a little soap is fine for well-seasoned pans), give it a quick wipe with a towel to remove most of the water. Then, place the pan on a burner over low to medium heat. Let it sit for about five minutes, or until you can see that all traces of moisture have evaporated and the pan has a dull, dry appearance. This step drives out any water that might be hiding in the pores of the iron, stopping rust before it can even start.
An Alternative: Using the Oven
If your oven is already warm from cooking, you can use its residual heat to dry your pan. After washing and towel-drying, place the skillet in the warm oven for a few minutes. A temperature of around 200°F (about 93°C) is plenty to evaporate any lingering moisture. This method is particularly useful if you need to dry multiple cast iron pieces at once. Just be sure the oven is off and simply cooling down, as you only need gentle heat for drying, not the high temperatures required for seasoning.
The Crucial Final Step: A Light Coat of Oil
Once your skillet is bone-dry and still warm, the final step is to apply a very thin layer of cooking oil. This isn't about a full re-seasoning every time; it's a quick maintenance step that reinforces the existing seasoning and provides an extra barrier against humidity. Pour a small amount of a neutral, high-smoke-point oil—like vegetable, grapeseed, or canola oil—into the pan. Use a paper towel to rub the oil all over the interior surface, then use a clean part of the towel to wipe out the excess. The goal is a subtle sheen, not a greasy or sticky surface. Heating the pan for another minute can help bond this thin layer.
Proper Storage for a Rust-Free Future
How you store your cast iron matters, too. Keep your pans in a dry place where air can circulate. Avoid storing them under a sink or in a damp cabinet. If you stack your pans, place a paper towel between each one to absorb any ambient moisture and prevent the seasoning from getting scuffed. It’s also wise to store your skillet with the lid off or slightly ajar. Sealing a pan with its lid can trap humidity, creating a perfect environment for rust to form.
