You'll need oil or ghee, mustard seeds, urad dal (black gram), chana dal (Bengal gram), a few curry leaves, chopped green chillies, and grated ginger. For the finishing touches, have some fresh coriander, grated coconut, and a lemon wedge ready.

First, cook the vermicelli. If you are not using a pre-roasted variety, start by dry roasting the vermicelli in a pan until it turns a light golden brown and set it aside. Next, prepare the tempering. Heat oil in a wide pan and add mustard seeds. Once they splutter, add the urad dal and chana dal, frying until they turn golden. Now, add the ginger, green chillies, and curry leaves, followed by the chopped onions. Sauté until the onions become translucent. Add your mixed vegetables with a pinch of salt and sauté for a few minutes until they are slightly tender. Pour in hot water (typically a 1:1.5 vermicelli to water ratio, but check package instructions) and bring it to a rolling boil. Gently add the roasted vermicelli to the boiling water, stirring to prevent lumps. Cook on a medium flame until the water is absorbed, then cover the pan, reduce the heat to low, and let it steam for about 4-5 minutes. This final step makes the uppittu fluffy.
