An air fryer isn't magic; it's essentially a compact convection oven. It works by circulating incredibly hot air at high speed around your food. This process cooks the food and, more importantly, creates a crisp, golden-brown exterior similar to deep-frying.
For vrat snacks, which are often made from starchy ingredients like potatoes, sabudana (tapioca pearls), and various flours, this method is ideal. Crispy Kuttu and Singhara Pakode
Pakode made from kuttu (buckwheat flour) or singhara (water chestnut flour) are another Vrat favourite. Unlike deep-frying, which can leave them dense and oily, air-frying makes them light and crisp. Create a thick batter by mixing the flour with boiled and mashed potatoes, green chillies, and rock salt. Drop spoonfuls of the mixture into a preheated air fryer basket that has been lightly greased. A temperature of 180-190°C for 10-14 minutes is generally effective. Remember to flip them halfway through the cooking time to ensure they brown evenly on all sides. The slightly nutty flavour of these flours pairs beautifully with the crisp texture achieved in the air fryer.
Root Vegetables: Chips and Fries
Potatoes and sweet potatoes (shakarkandi) are staples during fasting, and the air fryer transforms them into guilt-free snacks. For chips, slice the vegetables as thinly as possible. Toss them with a minimal amount of oil or ghee and a sprinkle of sendha namak. Air fry at 180°C for 10-12 minutes, shaking the basket occasionally for even cooking. For fries, cut potatoes or arbi (colocasia) into long strips. After seasoning, cook them at a slightly higher temperature, around 200°C, for 15-20 minutes until they are golden and crispy on the outside and fluffy inside. This method delivers the satisfaction of French fries without the heavy grease.

To get the best results with your air-fried vrat snacks, follow a few simple rules. First, always preheat your air fryer for a few minutes before adding the food. Second, don't overcrowd the basket; cook in a single layer to allow hot air to circulate freely and crisp the food evenly. Third, a light brush or spray of oil is crucial for browning and crisping, especially for items like sabudana vada and pakode. Finally, many snacks, particularly those made from potato or root vegetables, get crispier as they cool, so let them rest for a minute or two after removing them from the basket.
