Eating in space is far more complex than a simple meal on Earth. Without gravity, food must be carefully designed to avoid creating crumbs that could float away and damage sensitive equipment. Meals need to be lightweight, compact, and have a long shelf
life—often over a year—without refrigeration. The Mysuru-based Defence Food Research Laboratory (DFRL), a lab under the DRDO, is tasked with this challenge for India's Gaganyaan mission. Leveraging its long experience in developing specialised food for soldiers in extreme conditions, DFRL is ensuring that every meal is not only safe and nutritious but also easy to consume in a microgravity environment. This involves using special packaging, like retort pouches, and creating foods that can be easily rehydrated or heated.
A Taste of India in Orbit
To boost morale and provide a sense of connection to home, the Gaganyaan menu features a variety of familiar Indian dishes. Scientists at DFRL have developed a menu of over two dozen items, including idli, vegetable pulao, chicken biryani, chapati, dal, and even desserts like moong dal halwa. The goal is to provide a diverse and appetizing selection for the astronauts during their mission. These meals are generally prepared to be mildly spiced, with optional spice sachets available for those who prefer more heat.
