The Unseen Risks in Your Daily Glass
Milk adulteration is the practice of intentionally adding substances to increase volume or extend shelf life for profit. The most common adulterant is water, which reduces the nutritional value of milk. But the problem often gets more dangerous. To make
diluted milk appear thick and pure, sellers sometimes add starch, urea, and even detergents. These additions aren't just deceptive; they are a serious health hazard. Consuming milk adulterated with chemicals like urea and detergents can lead to gastrointestinal problems, kidney issues, and other long-term organ damage. Some substances, like formalin used as a preservative, are known to be toxic and can have severe effects on the liver and kidneys.
Your Kitchen, Your Laboratory
While the thought of adulteration is worrying, you don't always need a high-tech lab to detect common impurities. The Food Safety and Standards Authority of India (FSSAI) has validated several simple tests you can perform at home. For water, put a drop of milk on a polished, slanted surface. Pure milk will flow slowly, leaving a white trail, while diluted milk will run down quickly without leaving a mark. To check for starch, boil a small sample of milk, let it cool, and add a drop of iodine tincture. A blue colour indicates the presence of starch. For detergents, mix 5-10 ml of milk with an equal amount of water and shake it vigorously. If a dense, persistent lather forms, it suggests the presence of detergent.
An Easy Test for Urea
Urea, added to artificially boost the protein content reading of diluted milk, is a particularly harmful adulterant that can strain the kidneys. Detecting it at home is also straightforward. Take about 5 ml of milk in a test tube or small glass. Add half a teaspoon of soybean or arhar dal powder and mix it well. After about five minutes, dip a red litmus paper into the mixture. If the paper turns blue, it confirms the presence of urea. If it remains red, the milk is likely free from this adulterant.
Beyond Purity: The Storage Equation
Even pure milk can become unsafe if not stored correctly. Milk is highly perishable, and improper storage creates a breeding ground for bacteria that cause spoilage and illness. The most common mistake is storing milk in the refrigerator door. This area experiences frequent temperature fluctuations every time the door is opened, which accelerates spoilage. For maximum freshness, milk should be stored on a shelf at the back of the fridge, where the temperature is coldest and most stable, ideally between 0°C and 4°C. Always keep the milk container tightly sealed to prevent it from absorbing odours from other foods. It is also advisable not to return unused milk from a serving jug to its original container, as this can introduce contaminants.
Regulation and The Bigger Picture
While home tests empower consumers, they are the first line of defence in a much larger system. The Food Safety and Standards Authority of India (FSSAI) is the main regulatory body responsible for setting and enforcing standards for milk and dairy products in the country. FSSAI defines the minimum fat and solids-not-fat (SNF) content for different types of milk, from full-cream to skimmed, and sets limits on microbial contamination. The authority conducts nationwide surveys to monitor the quality and safety of milk, and these have highlighted the scale of the adulteration problem. Addressing this issue requires a concerted effort involving stricter enforcement of regulations, better practices within the dairy industry, and continued consumer awareness.
