Classic Dal Tadka
No Indian meal is complete without a comforting bowl of dal, and turmeric is what gives Dal Tadka its signature sunshine hue and foundational earthy flavour. This simple lentil dish is the epitome of soul food. To make it, you simply boil yellow lentils
(like toor or moong dal) with turmeric powder and salt until soft and creamy. The magic happens in the 'tadka' or tempering. Heat ghee or oil, sizzle some cumin seeds, mustard seeds, dried red chillies, and finely chopped garlic until fragrant, and pour this sizzling mixture over the cooked dal. The turmeric in the dal balances the heat of the spices, creating a perfectly rounded and nourishing dish that pairs wonderfully with steamed rice or roti.
Simple Aloo Haldi Sabzi
For a quick weeknight dinner or a simple lunchbox addition, Aloo Haldi is a go-to recipe in many Indian homes. Here, turmeric isn't just a background note; it's the star. The dish involves pan-frying boiled and cubed potatoes with a generous amount of turmeric, which coats them in a vibrant, golden layer. Start by heating oil and adding cumin seeds. Once they splutter, add chopped onions and green chillies, sautéing until translucent. Then, add the potatoes along with turmeric powder, coriander powder, and salt. Stir everything together until the potatoes are well-coated and slightly crisped. The turmeric provides a warm, peppery flavour that complements the soft, starchy potatoes beautifully.
Fragrant Turmeric Rice
Move over, plain white rice. Turmeric rice, or Haldi Pulao, is an incredibly easy way to elevate a simple grain into something special. It’s a one-pot wonder that’s ready in under 30 minutes. To prepare, rinse your basmati rice and set it aside. In a pot, heat a little ghee or oil and sauté whole spices like cinnamon, cloves, and bay leaf. Add sliced onions and cook until golden. Next, stir in the turmeric powder, allowing it to bloom in the heat for about a minute to release its full aroma. Add the drained rice, water or vegetable stock, and salt. Bring to a boil, then cover and simmer until the rice is fluffy and has absorbed the beautiful yellow colour and earthy taste of the turmeric. It serves as a flavourful base for any curry or can be enjoyed on its own.
Quick Besan Cheela
Besan Cheela, a savoury pancake made from gram flour (besan), is a popular and protein-packed breakfast or snack across India. Turmeric plays a crucial role in giving these pancakes their appealing golden-brown colour and adds a subtle depth of flavour. To make the batter, simply whisk besan with water until you have a smooth, pourable consistency. To this, add turmeric powder, ajwain (carom seeds), salt, and finely chopped vegetables like onions, tomatoes, and coriander leaves. Pour a ladleful of the batter onto a hot, oiled tawa or pan and spread it into a thin circle, much like a crepe. Cook on both sides until golden and crisp. These cheelas are delicious, quick to make, and a healthy way to start your day.
Soothing Haldi Doodh (Turmeric Milk)
An age-old remedy and a modern-day wellness trend, Haldi Doodh or 'Golden Milk' is the simplest way to consume turmeric. It's a comforting beverage often enjoyed before bedtime for its soothing properties. To make it, gently warm up a glass of milk (dairy or plant-based) in a small saucepan. Add about half a teaspoon of turmeric powder, a pinch of black pepper (which helps the body absorb turmeric's beneficial compounds), and a sweetener of your choice, like jaggery or honey. You can also add other warming spices like a small piece of ginger or a pinch of cinnamon powder. Simmer for a few minutes, but do not boil. Strain into a mug and enjoy this warm, nourishing drink that's perfect for winding down.
