The Reality of Milk Adulteration
Concerns over milk adulteration are not unfounded. Studies and surveys have shown that common adulterants include water, detergent, starch, and urea. Water is the most common, added to increase volume, which reduces the nutritional value of the milk.
Other substances like detergent or starch are sometimes added to restore the thickness and appearance of diluted milk. While alarming, it's important to know that these adulterants are often cut costs and boost profits. The immediate health effects can range from gastrointestinal issues to more serious long-term damage to organs from chemical contaminants. Sourcing milk from trusted, licensed vendors is the first and most crucial step in ensuring safety.
Simple Home Tests You Can Actually Use
You don't need a laboratory to perform basic checks for common adulterants. The Food Safety and Standards Authority of India (FSSAI) recommends several simple tests. To check for water, place a drop of milk on a polished, slanted surface. Pure milk will flow slowly, leaving a white trail, while milk adulterated with water will run down quickly without leaving a mark. To test for detergent, shake 5-10 ml of milk with an equal amount of water. If a thick, persistent foam forms, it may indicate the presence of detergent; pure milk will only form a thin foam layer that disappears quickly. For starch, boil a small sample, let it cool, and add a drop of iodine solution. A blue color indicates the presence of starch.
When Storage Is the Real Culprit
While adulteration is a serious concern, a more common household issue is spoilage due to improper storage. Once milk is opened, it's exposed to airborne bacteria. These microbes feed on the milk's sugars and produce lactic acid, which causes the sour taste and curdled texture of spoiled milk. This is different from adulteration, which is the intentional addition of foreign substances. The biggest factor in slowing bacterial growth is temperature. Even a few degrees can make a significant difference in how long your milk stays fresh.
The Golden Rules of Milk Storage
To maximize freshness, your refrigerator should be set between 0°C and 4°C. The most common mistake is storing milk in the fridge door. The door is the warmest part of the fridge and is subject to frequent temperature fluctuations every time it's opened. The best place for milk is on a shelf towards the back, where the temperature is coldest and most stable. Always keep the milk container tightly sealed to prevent it from absorbing odours from other foods and to limit exposure to air. Finally, don't return unused milk from a serving jug back into the original container, as this can introduce bacteria and spoil the entire batch.
Pasteurised vs. Raw: A Note on Safety
Pasteurisation is a heating process that kills harmful bacteria like E. coli and Salmonella without significantly changing the milk's nutritional value. This process makes milk much safer to consume. If you purchase raw, unpasteurised milk directly from a local vendor, it is crucial to boil it before consumption to kill any potential pathogens. Packaged milk from reputable brands will be pasteurised and clearly labelled. Checking for a valid FSSAI license on the packaging is another way to ensure you are buying from a regulated source that adheres to safety standards.
