Start with the Right Spud
The journey to potato perfection begins with your selection. For that ideal crispy-outside and fluffy-inside texture, you need a potato with a high starch content. Varieties like Russet, Maris Piper, and King Edward are excellent choices. Their floury
texture is precisely what you need. Waxy potatoes, such as Red Bliss, have lower starch and higher moisture, which means they hold their shape well but won't deliver the same fluffy interior when roasted. While delicious in their own right, it's best to save the waxy varieties for potato salads or gratins.
The Crucial First Cook
One of the most essential steps to guarantee a crisp exterior is to parboil the potatoes before they go into the oven. Cut your potatoes into evenly sized chunks, about one to two inches, and place them in a pot of cold, salted water. Bringing them to a boil and cooking for about 8-10 minutes until they are just tender is key. Some chefs add a pinch of baking soda to the water, as the alkaline environment helps break down the potato's surface, creating more area for crisping. This pre-cooking step gelatinises the starches on the outside, which is the foundation of a crunchy crust.
Create a Craggy Surface
Once parboiled, drain the potatoes thoroughly in a colander. This next step is where the magic really happens. After letting them steam dry for a minute or two, shake the colander vigorously. This action will rough up the edges of the potatoes, creating a wonderfully craggy, mashed-potato-like surface. It's these nooks and crannies that will catch the hot fat in the oven, transforming into an exceptionally crisp and crunchy shell that provides a delightful textural contrast to the soft interior.
Choose Your Fat Wisely
The fat you choose plays a significant role in both flavour and crispiness. For a luxurious, deeply savoury flavour, animal fats like goose or duck fat are a classic choice. However, a neutral vegetable oil with a high smoke point, such as sunflower or canola oil, also works beautifully to achieve a light, crisp finish without adding an overpowering taste. For a flavourful, Italian-style potato, a good quality olive oil is an excellent option. Whichever you choose, the most critical part of the technique is to preheat the fat. Pour your oil onto the baking tray and place it in the hot oven for a few minutes before adding the potatoes. When they hit the hot fat, they should sizzle immediately.
Harness the Power of Herbs
Herbs elevate roasted potatoes from simply good to truly memorable. The key is knowing when to add them. Hardy, woody herbs like rosemary and thyme can withstand the high heat of the oven, so you can toss them with the potatoes from the beginning. This allows their aromatic oils to infuse the fat and perfume the potatoes throughout the cooking process. More delicate fresh herbs, such as parsley, chives, oregano, or tarragon, would burn if added too early. It's best to chop these and toss them with the hot potatoes right after they come out of the oven. This way, their fresh, vibrant flavour remains intact.
The Final Roasting Ritual
With all the prep work done, it's time for the final roast. Spread your potatoes in a single layer on the preheated baking sheet, making sure not to overcrowd the pan. Giving each piece of potato enough space allows hot air to circulate freely, ensuring they roast rather than steam. A hot oven, around 220°C (425°F), is essential. Roast for 30 to 40 minutes, turning them halfway through, until they are deeply golden brown and audibly crisp on all sides. The result will be a batch of potatoes that perfectly embodies that sought-after combination of a crunchy exterior and a soft, fluffy centre.
