A Surprisingly Healthy Indulgence
Before you start roasting, it’s worth appreciating what a powerhouse of nutrition the simple green pea is. Peas are packed with plant-based protein and dietary fibre, which help you feel full and satisfied. They are also a good source of vitamins A, C,
and K, along with minerals like iron and manganese. This combination of nutrients can support everything from your immune system to heart health, making crispy peas a snack you can feel good about munching on. Unlike many processed snacks, this homemade version puts you in complete control of the ingredients, from the amount of oil to the type of seasoning.
Fresh vs. Frozen: Which Is Best?
You can successfully make crispy peas using either fresh or frozen varieties, but many find frozen peas to be more convenient and even yield a crispier result. Frozen peas are readily available year-round and are frozen at peak freshness. If you're using fresh peas, you may need to blanch them in boiling salted water for a few minutes first. For frozen peas, the first step is to thaw them. You can do this by running them under warm water in a colander. The single most important step for achieving crispiness, regardless of which you use, is to dry them thoroughly. Spread the thawed peas on a clean kitchen towel and gently pat them dry, removing as much surface moisture as possible. For extra crunch, you can let them air-dry for 30-40 minutes before roasting.
The Classic Oven-Roasted Method
The oven is a reliable way to get a large batch of peas crispy and golden. Start by preheating your oven to around 190-200°C (375-400°F). Once your peas are completely dry, toss them in a bowl with about a teaspoon of olive oil or another cooking oil, just enough to lightly coat them. Sprinkle with salt and spread them in a single, even layer on a baking sheet lined with parchment paper. It is crucial not to overcrowd the pan, as this will cause the peas to steam rather than roast. Bake for 30-40 minutes, shaking the pan every 10-15 minutes to ensure they cook evenly. The peas are done when they are browned and shrunken. They will continue to crisp up as they cool.
The Air Fryer for Quicker Crunch
If you have an air fryer, you can achieve an even crunchier texture in less time. Preheat your air fryer to about 180-200°C (360-400°F). After drying and lightly oiling your peas, place them in the air fryer basket in a single layer. Cook for approximately 12 to 15 minutes. It’s important to shake the basket every 5 minutes or so to prevent them from burning and to promote even crisping. Depending on your appliance, you might want to add another few minutes for extra crispiness. The result is a snack that is irresistibly crunchy and ready in a flash.
Get Creative With Seasonings
While a simple sprinkle of salt is delicious, crispy peas are a blank canvas for flavour. For a classic Indian twist, toss the hot, roasted peas with a pinch of chaat masala for a tangy, spicy kick. Other great combinations include red chilli powder for heat, turmeric for colour and earthiness, or a mix of ground cumin and coriander powder. A simple garlic powder and black pepper mix is also a crowd-pleaser. Feel free to experiment with your favourite spice blends, such as peri-peri or even nutritional yeast for a cheesy flavour. Add any ground spices in the last few minutes of cooking or toss them with the peas while they are still hot from the oven or air fryer.
