Tomato Ketchup Without Tomatoes
Food safety officials from the Ahmedabad Municipal Corporation (AMC) recently conducted raids on multiple food manufacturing units, uncovering a startling practice: the production of 'tomato ketchup' with no tomatoes. In raids in areas like Behrampura
and Gota, authorities seized thousands of kilograms of counterfeit sauce. One unit was allegedly producing a product using potato flakes, corn flour, sugar, salt, and artificial red colouring. Another was found to be using a paste made from potato powder mixed with water and synthetic flavours to mimic the taste and texture of real ketchup. The factories were sealed and huge quantities of raw materials and finished goods were prohibited from sale, with samples sent for laboratory testing. Officials noted that the products were sold in large containers at extremely low prices, often to street food vendors.
The Dangers of Adulteration
The primary concerns are both consumer deception and significant health risks. While selling a potato-based sauce as tomato ketchup is misleading, the use of non-permitted ingredients is a greater cause for alarm. Officials have raised concerns about the use of unapproved chemical colours and acids to achieve the desired appearance and tanginess. Consuming such adulterants can lead to a range of health issues, including indigestion, food poisoning, and in the long term, more severe damage to vital organs like the liver. The unhygienic conditions reported at some of these facilities, with dirty utensils and improper storage, further increase the risk of contamination and illness. These raids highlight a recurring problem, as authorities across the country frequently crack down on various forms of food adulteration.
A Safer Alternative: Homemade Ketchup
For those concerned about the contents of commercially produced sauces, making your own ketchup at home is a simple and rewarding alternative. It gives you complete control over the ingredients, allowing you to avoid artificial preservatives, colours, and excessive sugar. A basic homemade ketchup recipe uses fresh, ripe tomatoes, which are packed with nutrients like Vitamin C and lycopene, an antioxidant with numerous health benefits. By making it yourself, you ensure that your family enjoys a condiment that is not only delicious but also genuinely wholesome. It is a small step that can provide great peace of mind in an era of growing concerns about food safety.
Simple Homemade Ketchup Recipe
You don’t need to be a master chef to create delicious ketchup. Here is a basic recipe to get you started. Ingredients: 1 kg ripe red tomatoes, roughly chopped; 1 medium onion, chopped; 2-3 cloves of garlic, minced; 1/2 cup vinegar; 3-4 tablespoons of sugar (or to taste); 1 teaspoon salt; 1/2 teaspoon black pepper; a pinch of allspice or cinnamon (optional). Method: First, combine the tomatoes, onion, and garlic in a large, heavy-bottomed pot. Cook over medium heat until the tomatoes are soft and pulpy, which usually takes about 20-25 minutes. Next, pass the cooked mixture through a fine-mesh sieve, pressing down on the solids to extract as much liquid as possible. Discard the seeds and skins. Return the smooth tomato puree to the pot. Add the vinegar, sugar, salt, and spices. Bring the mixture to a boil, then reduce the heat and let it simmer gently. Stir occasionally to prevent it from sticking. Continue to simmer for 45-60 minutes, or until the ketchup has thickened to your desired consistency. Allow it to cool completely before transferring it to a clean, airtight glass bottle or jar. It can be stored in the refrigerator for several weeks.
