Milk adulteration is a widespread issue driven by the gap between supply and demand, which some unscrupulous suppliers exploit for profit. The practice involves adding substances to increase volume, thickness, or shelf life. While adding water is the most
common form of dilution, which reduces nutritional value, the more dangerous adulterants include chemicals like detergent, urea, and even formalin. These substances can pose serious health risks, ranging from gastrointestinal problems and food poisoning to long-term damage to vital organs like the heart and kidneys. The Indian Council of Medical Research has highlighted that these adulterants can have hazardous effects, making vigilance at the consumer level more important than ever.
Common Adulterants to Watch For
Understanding what might be in your milk is the first step to detecting it. Besides water, common adulterants include: - Detergent: Added to create a frothy, thick appearance, it can cause food poisoning and other digestive complications. - Urea: This is sometimes added to whiten milk and increase its non-fat solids content, but it can have serious long-term health effects. - Starch and Flour: These are used to increase the thickness of diluted milk but add no nutritional value. - Formalin: A preservative used to extend shelf life, formalin is toxic and can cause severe health issues. - Synthetic Milk: This is a mixture of water, detergent, urea, and other chemicals, which turns yellowish upon heating.
Simple Home Tests You Can Perform
The Food Safety and Standards Authority of India (FSSAI) recommends several simple tests you can conduct at home to check for purity. 1. Water Adulteration Test: Place a drop of milk on a polished, slanting surface. Pure milk will flow slowly, leaving a white trail. Milk diluted with water will flow immediately without leaving a mark. 2. Detergent Test: Take 5-10 ml of milk in a bottle and shake it vigorously. If a thick, persistent foam forms, it may indicate the presence of detergent. Pure milk will only form a thin layer of foam that quickly disappears. 3. Urea Test: In a small bowl, mix a tablespoon of milk with soybean or arhar dal powder and shake well. After five minutes, dip a red litmus paper into the mixture. If it turns blue, the milk contains urea. 4. Starch Test: Boil 2-3 ml of milk and let it cool. Add a few drops of iodine solution. A blue colour indicates the presence of starch. 5. Synthetic Milk Test: Synthetic milk often turns yellow when heated and can feel soapy when rubbed between your fingers.
What Changed: A Renewed Regulatory Push
In recent years, regulatory bodies have increased their focus on milk safety. States like Maharashtra have tightened rules across the entire supply chain, mandating traceability records, stricter cold-chain management, and clear labelling for raw versus pasteurised milk. Raw milk containers must now explicitly state "RAW MILK" and advise boiling before consumption. The FSSAI has also become more active in consumer education, regularly sharing simple home testing methods through social media and its DART initiative (Detect Adulteration with Rapid Test). Furthermore, there has been a push for clearer labelling standards overall, such as a proposed mandatory logo for all milk products to help consumers identify them easily.
What Did Not Change: Persistent Challenges
Despite new regulations, significant challenges remain. The sheer scale of the unorganised dairy sector makes enforcement difficult. Home testing kits and methods, while useful for preliminary checks, have their limitations. They are not designed to be as accurate as laboratory tests and may not detect low levels of contamination or certain sophisticated adulterants. The risk of false results also exists if the tests are not performed correctly. Therefore, these home checks should be seen as a first line of defence, not a definitive guarantee of purity. The fundamental issue of meeting the huge demand for milk in India continues to create economic pressure that can lead to adulteration.
Beyond Adulteration: Smart Storage at Home
Ensuring milk safety isn't just about what's been added; it's also about how you store it. Proper handling is crucial to prevent bacterial growth and spoilage. FSSAI guidelines stress the importance of chilling milk immediately. Raw milk should be brought to a boil shortly after purchase to kill any harmful bacteria and then cooled and refrigerated promptly. Store milk in a clean, covered container, preferably in the main body of the refrigerator rather than the door, where temperatures fluctuate more. UHT (Ultra-High Temperature) processed milk in tetra packs can be stored at room temperature until opened, after which it must be refrigerated and consumed within a few days.
