The Hidden Ledger of Our Plates
When we talk about the “environmental cost” of food, it’s more than just carbon emissions. It’s a vast, hidden ledger that includes the immense quantities of water used for irrigation, the land cleared for crops and livestock, and the pollution from fertilizers
and pesticides that can contaminate soil and water sources. Globally, our food system is responsible for about one-third of all greenhouse gas emissions. The United Nations estimates the hidden costs of our agrifood systems, including environmental damage and health impacts, amount to a staggering $12.7 trillion per year. These costs aren't reflected in the price you pay at the checkout counter; instead, they are externalized, paid by the planet and, more specifically, by certain communities.
High Consumption, Distant Consequences
There is a profound geographical disconnect between who consumes the most and who bears the environmental brunt. High-income nations, with consumption-heavy diets and lifestyles, effectively outsource the environmental consequences of their food choices. The demand for commodities like meat, coffee, and palm oil in the Global North drives deforestation, land conversion, and over-exploitation of natural resources in developing countries of the Global South. This process creates a pattern where wealthier nations benefit from a diverse and plentiful food supply, while the environmental degradation—such as soil erosion, water depletion, and biodiversity loss—is concentrated in the producer nations. This creates a system where the environmental costs are shifted onto developing countries that serve as primary food suppliers.
A Tale of Two Diets
The inequality is also starkly visible in dietary patterns. Diets in wealthier nations are often rich in red meat and dairy, which are significantly more resource-intensive to produce. Livestock farming is a major source of methane and requires vast amounts of land and water. In contrast, populations in many lower-income countries consume diets that have a much smaller environmental footprint. Yet, these are the very populations who are most vulnerable to the impacts of environmental degradation, such as drought and land desertification, which threaten their local food security. The irony is that the world's poorest, who contribute the least to food-related emissions, are the most exposed to the resulting climate shocks and food system collapses.
The Burden Within Borders
This inequality isn't just an international issue; it exists within countries as well, including India. Systematic inequalities in wealth and power mean that marginalised communities often live and work in areas most affected by agricultural pollution. Smallholder farmers, farm labourers, and Adivasi communities frequently bear the disproportionate burden of water contamination from fertilizer runoff and the health impacts of pesticide use. As India's food systems evolve, with rising demand for resource-intensive foods, the pressure on land and water resources grows. The hidden costs of the food system in India are estimated at nearly 10% of GDP, factoring in environmental damage and healthcare expenses. Policies that could promote sustainability, however, often receive less funding than those focused on production volume, indicating a long road ahead for integrating environmental justice into food policy.
Food Loss: A Double Injustice
The problem extends to what we don't eat. Globally, about a third of all food produced is lost or wasted. But here, too, there is a clear divide. In the Global South, food loss primarily happens at the production and post-harvest stages due to a lack of technology, poor infrastructure, and inadequate cold storage. In India, for example, a significant amount of fresh produce is wasted due to a lack of cold storage facilities. In the Global North, the waste happens at the other end of the chain—at the retail and consumer level, where perfectly edible food is thrown away. This means developing countries lose not only the food itself but also all the resources invested in growing it, while consumer waste in wealthy countries drives unnecessary production and its associated environmental toll.
