The Powerhouse Seed
Before we dive into the recipes, it’s worth knowing why flaxseed is celebrated as a nutritional powerhouse. These small seeds are one of the best plant-based sources of alpha-linolenic acid (ALA), a type of omega-3 fatty acid that is beneficial for heart
health. They are also packed with dietary fibre, which aids digestion, helps you feel full longer, and can assist in controlling cholesterol levels. Furthermore, flaxseeds are a rich source of lignans, which are compounds with antioxidant properties that help protect your cells from damage. For your body to best absorb these nutrients, it's recommended to use ground or milled flaxseed rather than whole seeds, as the hard outer shell can be difficult to digest. You can easily grind whole seeds at home in a coffee grinder or blender, or buy them pre-ground.
Simple Flaxseed Bread
Forget complicated bread-making. This simple, gluten-free loaf comes together quickly and requires no kneading or proofing time. It’s dense, moist, and perfect for toasting or making sandwiches. Ingredients: - 2 cups of ground golden flaxseed meal - 1 tablespoon baking powder - 1 teaspoon salt - 1 teaspoon apple cider vinegar - 1 ¼ cups warm water - Optional: a handful of sunflower or sesame seeds for topping Instructions: 1. Preheat your oven to 180°C (350°F) and line a standard loaf pan with parchment paper. 2. In a large bowl, whisk together the ground flaxseed meal, baking powder, and salt. 3. Add the apple cider vinegar and warm water to the dry ingredients. Stir with a spoon until a sticky dough forms and holds together. Let it sit for 2-3 minutes to thicken. 4. Transfer the dough to your prepared loaf pan. Wet your hands slightly to smooth the top of the loaf and sprinkle with seeds if using. 5. Bake for 45-50 minutes, or until the loaf is firm to the touch and a toothpick inserted into the centre comes out clean. 6. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing. Slicing while warm can cause it to crumble.
Crispy Flaxseed Crackers
These homemade crackers are incredibly easy and far healthier than store-bought versions. With just a few ingredients, you can have a crunchy, savoury snack that’s perfect with dips, cheese, or on its own. Ingredients: - 1 cup ground flaxseed - ½ cup water - ½ teaspoon salt - ½ teaspoon garlic powder - Optional spices: a teaspoon of dried rosemary, oregano, or everything bagel seasoning Instructions: 1. Preheat your oven to 200°C (400°F). Prepare a large baking sheet by lining it with parchment paper. 2. In a medium bowl, combine the ground flaxseed, salt, garlic powder, and any other spices you’re using. 3. Pour in the water and mix until a thick, uniform paste forms. 4. Spoon the mixture onto the centre of the parchment-lined baking sheet. Place another sheet of parchment paper on top and use a rolling pin to roll the dough out as thinly and evenly as possible. 5. Remove the top layer of parchment paper. Use a knife or pizza cutter to score the dough into cracker shapes. 6. Bake for 15-20 minutes, or until the edges are golden brown and the crackers are crisp. Keep a close eye on them as they can burn quickly. 7. Let them cool completely before breaking them apart along the score lines. They will become crispier as they cool.
No-Bake Energy Balls
For a quick and healthy snack on the go, these no-bake energy balls are the perfect solution. They are packed with protein and fibre to keep you energised throughout the day. Best of all, they come together in minutes. Ingredients: - 1 cup rolled oats - ½ cup creamy peanut butter (or another nut butter) - ½ cup ground flaxseed - ⅓ cup honey or maple syrup - ½ cup mini chocolate chips or dried fruit - 1 teaspoon vanilla extract Instructions: 1. In a large bowl, combine all the ingredients: oats, peanut butter, ground flaxseed, honey, vanilla extract, and chocolate chips. 2. Stir everything together until it’s thoroughly mixed and forms a sticky, thick consistency. If the mixture feels too dry, add a teaspoon of water at a time until it holds together. 3. Chill the mixture in the refrigerator for about 30 minutes. This will make it less sticky and easier to roll. 4. Once chilled, roll the mixture into bite-sized balls, about one inch in diameter. 5. Store the energy balls in an airtight container in the refrigerator for up to a week.
