The Unwanted Ingredients in Your Milk
Milk adulteration is the practice of deliberately adding substances to increase volume, extend shelf life, or mimic a richer texture. The most common adulterant is water, which not only dilutes nutritional value but can also introduce harmful bacteria
if it's not clean. Other dangerous additives found in some supplies include detergents, which are used to create a foamy appearance in diluted milk, and urea, which can artificially boost protein readings. Starch is also used to thicken watered-down milk. While government bodies like the Food Safety and Standards Authority of India (FSSAI) conduct large-scale surveys, consumers can also play a role in vigilance. Long-term consumption of milk with chemical adulterants can lead to serious health issues, including gastrointestinal problems and damage to vital organs.
Simple Home Tests for Purity
You don’t need a fancy lab to perform basic checks on your milk. These FSSAI-recommended tests use common household items to spot red flags.
The Slope Test for Water: Put a single drop of milk on a clean, polished, slanting surface, like the back of a steel plate. Pure milk will flow slowly or stay put, leaving a white trail behind. Milk diluted with water will run down immediately without leaving a mark.
The Shake Test for Detergent: Take a small amount of milk in a bottle with an equal amount of water and shake it vigorously. If a dense, persistent lather forms (like soap bubbles), it's a sign of detergent. Pure milk will only form a thin layer of foam that quickly disappears.
The Iodine Test for Starch: Boil a few millilitres of milk and let it cool. Then, add a couple of drops of tincture of iodine, which is available at most pharmacies. If the milk turns blue, it indicates the presence of starch.
Checking for Synthetic Milk and Urea
Synthetic milk, a completely fake product, poses significant health risks. It often has a bitter taste and feels soapy or slippery when you rub a drop between your fingers. A key indicator is that it may turn yellowish when heated.
To test for urea, another harmful additive, you can use a slightly more involved method. Take a teaspoon of milk in a small container and mix in half a teaspoon of soybean or arhar (pigeon pea) powder. Shake the mixture well and let it stand for five minutes. After that, dip a red litmus paper into the solution. If the paper turns blue, it indicates the presence of urea.
The Golden Rules of Milk Storage
Proper storage is just as crucial as checking for purity. It prevents bacterial growth and ensures your milk stays fresh and safe for consumption. The first rule is temperature. Your refrigerator should be set between 0°C and 4°C. Always store milk on the shelves at the back of the fridge, where the temperature is coldest and most stable, not in the door where temperatures fluctuate.
Keep milk in its original, sealed container whenever possible to protect it from light and prevent it from absorbing odours from other foods. Once a container is opened, it should ideally be consumed within three days. A crucial practice is to never pour unused milk from a serving jug back into the original container, as this can introduce bacteria and spoil the entire batch.
Being a Vigilant Consumer
Beyond home tests, the best defense is to be a smart and aware consumer. Whenever possible, buy milk from trusted vendors or reputable brands that follow FSSAI guidelines. Check for the FSSAI logo and license number on packaged milk. Pay attention to the 'best before' date and ensure the packaging is intact and properly sealed. Also, trust your senses. If milk has a sour smell, a bitter or soapy taste, or a curdled consistency, it's best to discard it. Pure milk should have a clean, slightly sweet smell. By combining these vigilant buying habits with simple home checks and proper storage, you can significantly improve the safety and quality of the milk you bring to your table.
