The internet has fallen in love with Biscoff coffee, and for good reason. It combines the deep, caramelised and spiced notes of Lotus Biscoff spread with the robust bitterness of coffee, all mellowed by creamy milk. The result is a drink that feels like
a warm hug in a mug—a perfect blend of dessert and pick-me-up. The challenge, however, has always been getting the thick cookie butter to dissolve without leaving clumps at the bottom of your cup. This method solves that problem, delivering a smooth, perfectly integrated flavour in every sip.
Gather Your Simple Ingredients
The beauty of this recipe is its simplicity. You likely have most of what you need already. For one serving, you will require: about 250ml of milk (dairy or a plant-based alternative like oat milk works beautifully), one to two teaspoons of Biscoff spread, one to two teaspoons of instant coffee granules, and an equal amount of sugar. You will also need a small amount of hot water to help create the coffee foam. Optional garnishes include a sprinkle of cinnamon or some crushed Biscoff biscuits for extra texture and flair.
Step 1: The Smooth Biscoff Base
This is the crucial step that elevates your drink from clumpy to creamy. Pour your milk into a small saucepan and add the Biscoff spread. Gently heat the milk on the stove over low to medium heat, stirring continuously. The warmth helps the cookie butter melt and fully dissolve into the milk, creating a seamless, flavoured base. Be careful not to let the milk boil, as this can cause it to scald and alter the taste. If you prefer, you can also do this in a microwave-safe mug, heating in 30-second intervals and stirring in between until the spread has completely disappeared into the milk.
Step 2: The Frothy Coffee Topper
While your Biscoff milk is gently warming, you can prepare the coffee layer. This technique, made famous by the Dalgona coffee trend, creates a surprisingly stable and velvety foam without an espresso machine. In a separate bowl or mug, combine the instant coffee, sugar, and a tablespoon or two of hot water. Using a handheld electric milk frother, a small whisk, or even just by vigorously shaking the mixture in a sealed jar, whip the ingredients together. Continue for a few minutes until the mixture becomes light in colour, thickens, and forms soft, fluffy peaks. The sugar helps stabilize the foam, so don't be tempted to skip it.
Step 3: Assemble Your Masterpiece
With both components ready, it’s time for the final assembly. Pour the warm, smooth Biscoff-infused milk into your favourite mug, filling it about two-thirds of the way. Next, gently spoon the whipped coffee foam on top, letting it sit as a distinct, café-style layer. As you drink, the layers will slowly combine. For a finishing touch, sprinkle some crushed Biscoff cookie crumbs or a dash of cinnamon over the foam. The result is a visually impressive, multi-layered drink that tastes even better than it looks.
Customise Your Creation
This recipe is a fantastic starting point, but feel free to make it your own. For a richer flavour, use whole milk or a barista-style oat milk. If you prefer your drinks less sweet, you can reduce the amount of sugar in the coffee foam. On a warm day, this recipe is easily adapted for an iced latte. Simply let the Biscoff milk cool completely, pour it over a glass full of ice, and then top with the coffee foam.
